Ingredients:
14 oz. New York Strip Steak
Beef Shake
½ cup Traeger Texas Spicy BBQ Sauce
½ cup Traeger Apricot BBQ Sauce
· Pour the Texas Spicy and Apricot BBQ Sauce into a shallow casserole dish, stirring to combine. Place the strip steak in the mixture, making sure the steak is coated evenly on both sides. Cover with plastic wrap and marinate in the refrigerator for a minimum of 3 hours, or overnight. Remove the steak from the marinade and season with Beef Shake 45 minutes before grilling to bring it to room temperature and allow it to absorb the seasoning.
· When ready to cook, start your Traeger on Smoke with the lid open until the fire is established (4-5 minutes). Set the temperature to High (450°F) and preheat, lid closed (10-15 minutes).
· Place steak toward the front of the grill grate for 4-5 minutes on each side for medium rare (place in the middle of the grill grate for a few more minutes if you prefer your steak medium or well). Remove from the grill and let rest for 3-5 minutes. Slice against the grain, serve and enjoy!

Garlic Butter Steak And Shrimp
1 lb Steak (NY Steak Strip, Ribeye, Sirloin)
High Smoke Point Oil Options
avocado oil, almond oil, corn oil, canola oil, grapeseed oil, peanut oil, safflower oil, sesame oil, and sunflower oil.
1 lemon
4 garlic cloves
5 rosemary leaves
parsley
7 thyme sprigs
1 oregano sprig
salt
pepper
1 pound of jumbo shrimp
1 1/2 stick of butter (1 stick for compound butter) (1/2 for basting steak) *If on a Keto diet use keto-friendly butter*
Preheat the oven to 425F
Add a small amount of oil to both sides of the steak
Season with salt and pepper
Pat the seasoning into the steak covering both sides
Season the entire steak
Using high heat add a small drizzle of oil to a heavy-duty skillet.
Allow the skillet to get extremely hot, add your steak to the pan, and
sear the steak on all sides for about 30 seconds to one minute.
Add about 4 tbs of butter to the pan
Add fresh herbs, 5 thyme, and 4 rosemary sprigs
Add the garlic cloves to the pan
When the butter is melted
(USE CAUTION) tilt the pan and begin to baste the butter onto the steak for about 2 minutes
Place the steak into the oven for about 5 minutes according to your desired doneness. (See Cooking Time Chart Below)
Be sure to use your thermometer to check if it's done!
COMPOUND BUTTER RECIPE
Add a stick of butter to a bowl
Use the remaining herbs for the butter.
Finely chop the parsley, oregano, thyme, and rosemary
Zest a lemon
Add the chopped ingredients to the butter along with the lemon zest
Add a pinch of salt and pepper
Combine all of the ingredients using the back of a spoon and set them aside
Now let's remove the steak from the oven and cover it down with some aluminum foil for about 10 minutes before slicing.

medium 140-145 F
medium well 150-155 F

SHRIMP PREP
Start off with adding a small drizzle of oil to the shrimp
Season with salt and pepper and combine.
Using a separate skillet add a small drizzle of oil
Place the shrimp in the skillet and be sure to cook the shrimp on all sides
Add some of the compound butter to the shrimp and combine
Add a good spritz of lemon juice to the shrimp and combine once again.

Stuffed Sirloin Tip Steak
4 thin sliced sirloin tip steak or flank steak
Stuffing
2 c shredded mozzarella cheese
1 c roughly chopped sun-dried tomatoes
1 1/2 c thawed and drained frozen spinach
1 egg yolk
2 tbsp panko bread crumbs
sea salt
black pepper
garlic powder
onion powder
olive oil
cooking twine
Preheat oven at 420 degrees. In a medium bowl add egg yolk, shredded mozzarella cheese, spinach, panko bread crumbs and mix very well. Take 4 thinly sliced sirloin tip steaks and lay & over lap them on a flat surface.
Season the beef sea salt, black pepper, garlic powder, and onion powder. Top the beef with the stuffing mixture. Spread out and leave a border on the edge to prevent stuffing falling out. Slowly roll stuffed beef as if your rolling a burrito. Take 4 strings of cooking twine and tie around the beef. Drizzle and rub 1 tbsp of olive oil on the meat. Then season outside with sea salt, black pepper, garlic powder, and onion powder. Heat olive oil in a cast iron skillet over medium high heat. Place meat in the pan. Rotate every 2-3 mins until steak is browned on all sides. Then finish in the oven for 30-35 mins until golden brown. Once it's done, allow to rest for 10 mins. EAT AND ENJOY!

Ribeye Steak with Sicilian Lemon Herb Sauce! | Easy Steak Recipe
Juicy and full of flavour rib eye steak is undoubtedly the king of steaks when cooked properly. Drizzle Sicilian Salmoriglio sauce aka lemon herb sauce all over yours for a taste of summer!
However if you are after flavour, you can’t go wrong with rib eye! Named after a roundish fat deposit in the center of the cut, resembling an eye, this steak delivers mind blowing result!
Tender, juicy and packed with flavour, thanks to fat marbling that runs through the entire steak, this cut of meat will never disappoint. This cut could come boneless or with a rib bone attached.
Although grilling steaks is considered the holy grail, the truth is you can cook your steak on a frying pan with absolutely outstanding results! Choose a quality piece of meat and follow my easy method for amazing results!
INGREDIENTS
2X400g/14oz ribeye steaks 1.5 inch thick
coarse salt
1 tbsp olive oil
1-2 sprigs fresh thyme or rosemary
2 tbsp butter
For the Salmoriglio Sauce
1-2 tbsp fresh oregano chopped
4 tbsp fresh parsley chopped
1 clove garlic grated or pressed
0.5 tsp coarse salt
½ lemon, juice of
2 tbsp extra virgin olive oil
⅛ tsp chilli flakes optional
