How To make Filet Mignon Sauce Madere
Ingredients

1/2 lb filet mignon
2
tablespoon
olive oil
2
tablespoon
shallots, finely chopped
1/4
cup
maderia wine
3/4
cup
beef broth
3
teaspoon
butter
1
teaspoon
flour
2
teaspoon
parsley, chopped
Directions:
Sprinkle the meat on both sides with salt and pepper. Heat the oil and when very hot add the meat. Cook over high heat about 5 minutes. Cook longer if you want medium or well-done meat.
Turn the meat and continue cooking over high heat about 5 minutes, or longer if desired. Remove the meat to a warm platter and keep warm.
Pour off the fat from the skillet. Add the shallots. Add the wine and cook over high heat about 30 seconds. Add the broth and bring to a full rolling boil, stirring to dissolve the brown particles that cling to the bottom and sides of the skillet. Add salt and pepper.
Cook until reduced by half. Meanwhile, blend 2 tsp. of butter and flour in small mixing bowl. Stir it into the simmering sauce and cook briefly. Swirl in the remaining teaspoon of butter. Strain the sauce over the meat and dot the center of each filet with a dab of parsley.
Serve immediately.

Aujourd’hui, nous vous présentons comment cuisiner des médaillons de veau avec sauce madère aux champignons.
???????? Les ingrédients de la recette :
2 médaillons de veau
10 g de mélange de champignons blanc et noir deshydratés
1 échalote
0.8 dl de vin de madère
1 dl de jus de veau
1.2dl de crème liquide
beurre, sel, poivre
???? L’intégralité de la recette :
Faire tremper les champignons dans de l’eau pendant 30 minutes
Hacher finement les échalotes et les faire revenir dans un peu de beurre
Ajouter le madère, le jus de veau et la crème, faire réduire.
Faire cuire au beurre les médaillons à la poêle pendant 10 minutes
Ajouter les champignons vers la fin pour les faire snacker.
Mélanger la sauce avec les champignons
