GINGERBREAD COOKIES | gingerbread man recipe
Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
INGREDIENTS:
150g honey
100g granulated sugar
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground cloves (optional)
2 tsp baking soda
130g unsalted butter (room temperature)
1 egg
400-450g flour
COOKING METHOD:
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally.
2. Remove from heat and add baking soda, stir (the mixture will foam and increase).
3. Add butter gradually and stir. Add egg and stir.
4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball.
5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour.
6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper.
7. Bake at 350F/175C for 10 minutes.

Ingredients
Orange Cookies
2 1/2 cups all-purpose flour/313g
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup salted butter, softened/110g
1/2 cup granulated sugar/100g
1/2 cup light brown sugar, packed/110g
1 large egg
1 11-ounce can mandarin oranges/311g
Orange Buttercream Frosting
1 cup (2 sticks) unsalted butter, softened/225g
4 cups powdered sugar/500g
1/4 cup orange juice/60ml
3 teaspoons vanilla extract
1 drop orange food coloring
salt, as needed
sprinkles, for topping
Instructions
Orange Cookies
Preheat oven to 375F degrees. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
In a medium sized bowl, whisk together flour, baking soda, and salt. Set aside.
Using a hand-held or stand mixer, cream together butter, granulated sugar, and light brown sugar until light and fluffy. Beat in egg.
Drain syrup from mandarin oranges. Blend in mandarin oranges into sugar mixture; you want the oranges to break apart.
Add flour mixture to sugar mixture and mix until just combined. DO NOT OVERMIX!
Using a cookie scoop or ice cream scoop, scoop dough into balls about 1 Tablespoons each and place onto prepared baking sheet.
Bake for 10 minutes. Let cool on wire rack before frosting.
Orange Buttercream Frosting
Mix softened butter on medium speed with an electric or stand mixer. Beat for 1-2 minutes until smooth and creamy.
Add powdered sugar, orange juice, and vanilla extract. Increase to high-speed and beat for 3 minutes.
Frost cooled cookies and top with sprinkles.

Poppy & Orange Frosted Window Cookies Recipe || 12 Days of Christmas (Cookies)
I'm counting down to the winter solstice (the shortest day of the year for us in the northern hemisphere) with... lots and lots of cookies. I may not be able to spend time with my friends and family in the ways I had hoped this year, but... at least my home smells like cookies?
Today I'm making these beautiful poppy seed and orange marmalade window pane cookies dusted with powdered sugar!
