►2 eggs (large), room temperature
►1 cup granulated sugar
►1 cup sour cream
►1/2 cup extra LIGHT olive oil (not extra virgin)
►1 tsp vanilla extract
►1/4 tsp sea salt
►2 cups all-purpose flour *measured correctly
►2 tsp baking powder
►2 tsp lemon zest (from 1 large lemon)
►2 Tbsp lemon juice (from 1 large lemon)
►1 1/2 cups (8 oz by weight) fresh blueberries, rinsed and dried

1 teaspoon (3 grams) grated lemon zest
1 cup (240 grams) non-dairy milk any
¾ cup (150 grams) sugar
¼ cup (60 grams) neutral vegetable oil like avocado oil or canola oil
1 tablespoon (15 grams) vanilla extract
DRY INGREDIENTS
2 cups (300 grams) all-purpose flour
1 tablespoon (12 grams) baking powder
⅛ teaspoon salt
2 cups (300 grams) blueberries fresh or frozen
1½ tablespoon (12 grams) cornstarch

Makes 12 muffins
Ingredients:
For the muffins:
1¾ cups (220g) Plain flour
1/2 teaspoon Baking soda
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
2 Eggs
1/2 cup (120ml) Buttermilk/milk or non-dairy milk
1/3 cup (80ml) Oil
1 teaspoon Vanilla extract
Lemon zest
1 cup Blueberries, fresh or frozen
For the crumble:
1/2 cup (50g) Sugar
1/3 cup (42g) Flour
3 tablespoons (45g) Butter, cold
1/2 teaspoon Cinnamon (optional)
Directions:
1. Make the muffins: Preheat the oven to 375F (190C). Grease 12 muffin cups or line with paper liners.
2. In a large bowl mix flour, baking powder, baking soda, salt.
3. In a separate bowl whisk egg and sugar until light and fluffy. Add milk, oil, vanilla extract and lemon zest. Whisk until combined.
4. Pour the wet mixture into the dry mixture and mix until combined. Add blueberries and mix just until combined.
5. Scoop the batter into muffin cups until 3/4 full.
6. Make the crumble (optional): Combine the ingredients for the crumble topping together in a small bowl and crumble together using your fingertips.
7. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
8. Allow to cool before serving.
How to Make LOADED Blueberry Streusel Muffins

Streusel Topping Ingredients:
⅓ cup (50 g) all-purpose flour
¼ cup (50 g) packed light brown sugar
¼ tsp (0.75 g) baking powder
¼ tsp (0.75 g) ground cinnamon
3 Tbsp (45 g) cool unsalted butter, cut into pieces
Muffins Ingredients:
½ cup (115 g) unsalted butter, at room temperature
1 cup (200 g) granulated sugar
1 tsp (5 mL) finely grated lemon zest
2 large eggs, at room temperature
2 ½ cups (375 g) all-purpose flour
2 tsp (6 g) baking powder
¼ tsp (1.5 g) salt
¼ tsp (0.75 g) ground nutmeg
½ cup (125 mL) 1% or 2% milk
2 cups (250 g) fresh blueberries
DIRECTIONS
Streusel Topping
1. Preheat the oven to 375 ºF (190 ºC) and line a muffin tin with paper liners.
2. For the streusel topping, stir the flour, brown sugar, baking powder and cinnamon together in a small bowl. Work in the butter with your fingertips until the mixture is roughly crumbled and no large pieces of butter are visible. Set aside.
Muffins
1. In a large mixing bowl, beat the butter, sugar and lemon zest together, until well combined. Add the eggs one at a time, mixing well after each addition.
2. In a separate bowl, sift the flour, baking powder, salt and nutmeg. Add half of this to the butter mixture and stir until blended. Add the milk, stir well and then stir in the remaining flour until smooth. Gently stir in the blueberries.
3. Scoop the batter into the prepared muffin tin (they will fill right to the top of the muffin cups) and sprinkle the streusel mixture overtop. Bake the muffins for about 35 minutes, until a tester inserted in the centre of a muffin comes out clean. Cool the muffins in the tin for 15 minutes, then turn out onto a cooling rack to cool completely.
Cooking tips:
The muffins will keep in an airtight container for up to 3 days.

BLUEBERRY MUFFINS
✔️Ingredients
2 large eggs
1 cup [240 ml] fresh milk
1/2 cup [120 ml] vegetable oil
1 tsp [5 ml] vanilla extract
1/2 cup [100 grams] granulated sugar
1/2 cup [100 grams] light or dark brown sugar
2 & 1/2 cups [320 grams] all purpose flour
1 tbsp baking powder (double acting)
1/2 tsp salt
350 grams canned or fresh blueberries (may adjust amount as desired)
⁉️READ ME
•Muffins are very easy to make when it comes to ingredients and mixing process. But some important factors must be considered when baking muffins to prevent fail such as follows;
-Do not overmix the batter.
-Make sure to use fresh leavener or baking agent (powder/soda).
-Do not open the oven door while baking until the muffin is nearly done.Opening the oven door too early could deflate the muffin.
-Do not overload muffins with heavy add-ons(ex..blueberries, raisins, choco chips or any fruits). Such dense muffin are less likely to dome or rise.
-Batter consistency may affect if adding/using canned fruits with light or thick syrup. Juice from the fruits can add moist to the muffin thus adds hydration ti the batter.
-Type of sugar may also affect the muffin’s texture. If the recipe calls for brown sugar which is naturally moist so it consequently makes the muffin softer & moister.Thus, using pure white sugar may result to a different texture.
-Check temperature accuracy. Temp. can be set up to 220C for the first 5 to 7 mins. of baking the muffins to get a good rise then reduce the temp. for the remaining baking time.
-Baking time may also depend on the size of muffin.
-For some may want a puffed muffin top, that may require an addition of flour.
