Easy Cheesy Loaded Grits Casserole
This is a very easy and delicious casserole to make. It is full of flavor and the cheese crusted on the top is just phenomenal. I hope you enjoy this recipe.
1 lb breakfast Sausage
1 med onion chopped
4 cups water
1/2 tsp salt
1 cup quick grits
3 4oz cans chipped green chiles
2 cups shredded cheddar cheese
2 cups mozzarella or jack cheese
2 Tbls butter
several dashes hot sauce
2 lg eggs beaten
paprika
Bake 325° cook sausage and onions
In a lg sauce pan bring water and salt to a boil add in grits and stir. Cover and cook on medium for 5 minutes stirring often. Allow to cool slightly. add in butter, chiles,, and 1/2 of the cheeses. Add in sausage mixture. poor into greased 9x13 baking dish. add remaining cheese to top and sprinkle with paprika and bake for 1 hour.

Puffed Garlic Cheese Grits

2 tbsp butter
1 tbsp + 1 tsp minced garlic
4 c water
3/4 tsp salt
1/2 tsp black pepper
3/4 tsp dry mustard
1/4 tsp ground red pepper
1 c regular grits, uncooked
1 1/4 c (6 oz) shredded sharp cheddar cheese
1/2 c (2 oz) shredded mozzarella cheese
4 eggs, separated
1/2 tsp cream tartar
dash of hot sauce
Set aside a shallow 2-quart casserole dish that has been lightly buttered. 2 tablespoons of butter should be melted over medium heat in a large pot. Sauté the garlic until golden. Add water, salt, and black pepper after that. This mixture should boil. Add the ground red pepper and mustard. Grits should be added gradually. Bring the mixture back to a boil. Cook for 15 minutes, or until liquid is absorbed, on low heat with a lid on. To prevent the grids from sticking, make sure to stir occasionally. Get rid of the heat. Add the egg yolks and cheese shreds. Place the mixture in a sizable bowl and set aside.
Using an electric mixer, whip the egg whites (at room temperature) and cream of tartar until frothy. Beat while adding hot sauce until stiff peaks form. Gently fold roughly a third of the egg whites you've beaten into the grits. The remaining egg whites are folded. The mixture of grits should be poured into a casserole dish. For 20 to 25 minutes, or until the grits are puffed and golden, bake at 400°F. Serve right away. There are around 8 servings per disk.

Creamy Garlic Shrimp And Grits Recipe
15 Jumbo Shrimp
salt
pepper
oil
1 cup grits
4 cups water or chicken broth
1 3/4 cups heavy cream
1/2 cup smoked or regular gouda
1/4 cup parmesan (cheese grits) + 1/4 cup (cream sauce)
4 tbsp butter
1/2 tbsp finely chopped shallots
2 tbs minced garlic in a jar or 3 cloves finely chopped
1/4 cup white wine
Parsley garnish
Add water or broth to a small pot, and allow it to come to a rolling boil
Add a small drizzle of oil to the shrimp.
Season the shrimp with salt and black pepper.
Add a small drizzle of oil to the pan and sear the shrimp on all sides.
Remove the shrimp and set it aside until later.
Using the same pan add 2 tablespoons of butter, shallots, and garlic. Cook until the shallots become translucent.
Add white wine, and 1 cup of heavy cream, and combine.
Add 1/4 cup of parmesan cheese and combine.
Allow the sauce to thicken, add the shrimp back to the pan, and garnish with parsley.
Add the grits to the pot and cook according to the instructions on the back of the box.
