How To make Gary's Beef Stroganoff
2 lb Beef, 1" cubes
1 1/2 lb Mushrooms
3 Onions
2 tb Dill, fresh
25 oz Red Wine, dry, full bodied
1 1/2 c Sour cream
1 tb Tomato paste
3 tb Olive oil
2 Garlic cloves, minced
1 Bay leaf
2 c Beef stock
Salt Pepper Flour for dredging
Peel and chop onions. If large mushrooms are being used, slice into rather large slices. I prefer to use small mushrooms and leave the whole. Dredge beef cubes in flour and give them a light coating. Heat a large stewing pot and add olive oil. Brown beef cubes thoroughly in olive oil. Add onions, garlic and mushrooms and saute lightly. Add red wine (all) and enough beef stock to barely cover the ingredients. Add bay leaf (broken) and dill. Salt and pepper to taste. Add tomato paste. Cover and simmer, stirring occasionally, for about 2 hours or until beef is very tender. The cooking liquid will thicken from the flour in which you dredged the beef. The desired result is that the ingredients are coated with a thick gravy. If more liquid is needed during the cooking process, add additional beef stock sparingly. Be careful that you scrape the bottom of the pot when stirring to prevent flour from sticking and burning. Just before ready to serve, mix in 1 1/2 cups sour cream. Place into a casserole dish or tureen and garnish with sprigs of fresh dill. Serve with rice or buttered noodles.

Delicious beef stroganoff
This dish is very easy to make and fast enough. You can serve it with any side dish of your choice. Many people prefer pasta or potatoes. I'll tell you how to cook a delicious beef stroganoff.
Ingredients:
Vegetable oil — 1 tablespoon,
Onion— 0.5 Pieces,
Mushrooms— 600 Gram,
Beef tenderloin— 380-400 Gram,
Salt, Pepper— To taste,
Whiskey or cognac — 0.5 Cups,
Beef broth— 1 Glass,
Mustard — 1 teaspoon,
Garlic— 2 Cloves,
Paprika— 1 teaspoon,
Water — 1/3 Cup,
Flour — 2 tablespoons,
Sour cream— 1 Glass,
Parsley — 3-4 Pieces,
The BEST Beef Stroganoff
City Restaurant, a cornerstone of Los Angeles' best of the best, published The City Restaurant Cookbook in the early 1980's. Here is their Stroganoff Recipe. It is far less time-consuming than the mess of a sour cream sauce that infiltrates every segment of our society.
INGREDIENTS
2 ½ Pounds Beef Tenderloin, trimmed
1 Tablespoon Unsalted Butter
2 ½ Cups sliced mushroom caps
¼ Teaspoon Salt
Dash of Pepper
1 ½ Cups Dill Pickles with 2 Tablespoons Juice, julienned
2 Cups heavy Cream
Salt and freshly ground pepper to taste
2 Tablespoons Vegetable Oil
DIRECTIONS
Remove any silver skin surrounding the tenderloin and cut into 1” slices, across width.
Slightly flatten slices by pressing with palm of your hand. Set aside.
Melt butter in a medium skillet over medium-high heat. Saute mushrooms with salt and pepper until golden, about 5 minutes. Add pickles and juice, and cook until juice evaporates slightly, about 2 minutes. Add cream and cook until reduced by half. While sauce is reducing, cook beef.
Season meat sparingly with salt and pepper, since sauce will be salty from the pickles. Heat a heavy large skillet over high heat, add oil and heat until it starts smoking.
Sear meat briefly, two minutes per side for medium rare. Serve beef over a bed of egg noodles with warm sauce ladled on top
