How To make German Apple Pancakes
1 1/2 c Flour
1/3 c Sugar
3/4 ts Salt
5 Eggs
1 c Milk
3/4 c Cream
1/4 c Melted butter
5 Apples, peeled and sliced
Instead of sliced apples, 1/2 cup chopped, peeled apple may be added to regular pancakes, and cooked on the griddle. Sift together the flour, sugar, and salt. Beat eggs with milk and cream. Add melted butter. Combine mixtures and beat until smooth. Heat a 10 inch skillet, brush well with butter and pour 3/4 cup of the batter into the pan, tipping so it flows evenly over the bottom. When pancake is set, cover with a layer of thinly sliced peeled apples and dot with butter. Sprinkle each pancake with cinnamon and sugar, and bake in a preheated 400F oven for 3 minutes. Fold pancakes so apples are inside. Brush top with butter, sprinkle with a little more cinnamon and sugar, and again, after all 6 pancakes are done, arrange on a fire proof platter and brown under the broiler. Makes 6. How to make German Pancakes:
German Cooking usually needs a lot of precision but in the case of making pancakes all Germans are kind of I go by my feeling. Well, in reality, it's more about experience. As a rule of thumb: If the first pancake is heavy and breaks apart easily into thick chunks, then you should add milk and maybe also eggs. If your German Pancake can't hold it's shape while trying to turn it and rips easily, you might want to add some flour. The way I make my German Pancake batter is, that I start with the wet ingredients and add the flour until it has the right consistency. #recipe #cook #food #how_to

Ingredients:
•½ cup all purpose flour
•1 tablespoon + ½ cup sugar
•½ teaspoon baking powder
•¼ teaspoon salt
•4 eggs
•1 cup milk
•1 teaspoon nutmeg
•1 teaspoon vanilla extract
•6 (¾ stick) tablespoons unsalted butter
•½ teaspoon cinnamon
•1-2 peeled, thinly sliced apples
Directions:
•Melt 2 tablespoons (¼ stick) of unsalted butter and set aside.
•In a bowl, whisk together the all purpose flour, a tablespoon of sugar, the baking powder, and salt.
•Whisk in the eggs until incorporated.
•Whisk in the milk until incorporated.
•Whisk in a ½ teaspoon of nutmeg, the vanilla extract and melted butter until incorporated.
•Allow the batter to sit for 30 minutes.
•Preheat an oven to 425 degrees.
•Peel and slice the apples.
•Once the batter has sat for 30 minutes, place a skillet over medium heat (This will go from the stove to the oven. So, it needs to not have any plastic that can melt. I use a cast iron skillet for this recipe.).
•Melt a ½ stick of butter in the skillet, making sure melted butter coats the inner sides, as well as the bottom.
•As the butter finishes melting mix in a bowl a ¼ cup of sugar, a ½ teaspoon of nutmeg and the cinnamon.
•Sprinkle (do not stir) all of the sugar/nutmeg/cinnamon mixture over all of the melted butter.
•Line the bottom of the skillet with the apple slices.
•Sprinkle a ¼ cup of sugar over the apple slices in the skillet and let cook for 5 minutes.
•Pour the batter over the apples in the skillet and place the entire skillet in the 425 degree oven.
•Bake for 15 minutes.
•After 15 minutes of baking, reduce the oven temperature to 375 and bake for another 10 minutes.
•Transfer the German Apple Pancake from the skillet to a serving dish.
•Slice and serve.

Traditional German apple pancakes, what’s not to love? Whether you are a fan of thick or thin pancakes, there is always a place for apples in them. These traditional thin pancakes (Apfelpfannkuchen) are made just the way Oma made them…well almost. There’s a smidgen of whole wheat flour and just a little vanilla sugar. The rest remains the same — a simple pancake recipe with flour, milk, eggs and a pinch of salt. A foolproof combination for a delicious breakfast, brunch or anytime of day sort of treat.
INGREDIENTS:
For the pancakes:
200 g all-purpose flour
70 g whole wheat flour
500 ml whole milk
1 x 8g package organic vanilla sugar
Pinch of sea salt
5 eggs, lightly beaten
Ghee, for greasing the cooking surface
For the apples:
2 large apples, peeled, cored and thinly sliced (ca. 500 g)
2 tablespoons raw cane sugar
1 teaspoon cinnamon (ceylon)
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
