How To make German Streusel Coffee Cake
1/2 c Milk
2 tb Sugar
1/4 c Butter (or marg.)
1 t Salt
1 pk Yeast, dry
14 c Water -- very warm
1 Egg
2 c Flour, all-purpose -- approx.
1/2 c Flour, all-purpose
1/2 c Sugar
1 t Cinnamon, ground
1/4 c Butter (or marg.)
Scald milk; pour into large mixing bowl; add sugar, 1/4 cup butter, and 1 teaspoon salt, and cool to
lukewarm. Dissolve yeast in 1/4 cup very warm water; add yeast mixture and egg to milk mixture and stir well. Add 2 to 2-1/4 cups flour gradually, beating well after each addition. Cover and let rise until doubled in bulk (about 1 hour). Spread in a greased 13x9x2" pan.
Combine 1/2 cup flour, 1/2 cup sugar, and 1 teaspoon cinnamon. With a fork or pastry blender, cut in 1/4 cup butter. Sprinkle over the mixture in pan. Let rise until doubled in bulk (30 to 45 minutes). Bake at 375 degrees for 20 to 25 minutes. SOURCE: Southern Living Magazine, February 1973.

Streusel Kuchen Recipe - German Yeast Cake with Crumb Topping!
Streusel Kuchen is a traditional German Yeast Cake Recipe topped with a sweet crumb. It is basically the German version of a coffee cake. And can be made with or with out yeast.
It is a versatile cake that can be topped with apples, plums and even peaches! My German mom used to make this cake with applesauce and called it Applesauce Streusel. My brother and I always loved when our mom made this as it was such a wonderful tasty treat! And now I am officially passing the recipe on to my Oma's great grand daughter!

The following amounts will make 2 to 3 smaller cakes (9 round or square pan) or one larger cake (9x13 pan) plus one smaller pan - and depending on how thick you lay out the dough in the pan. My mom used to stretch the dough thinner, about 1/2 inch before baking. I made mine about 1 thick and then it rose to about 2 So it is up to you how high you want the cake to be after baking - it will pretty much double in size while baking in the oven.
Yeast dough Ingredients
400 grams - all purpose flour
2 tsp - dry active yeast
150 ml - luke warm milk
80 grams - regular granulated sugar
1 room temperature egg *(medium or large size egg is fine)
100 grams - unsalted butter that has been melted and cooled
pinch of salt (no more than 1/8 tsp)
Follow instructions in video for making the dough - You need to mix the yeast in luke warm milk first - it should begin to bubble and foam within 5 to 10 minutes - if it does not do this the yeast is probably dead and you will not get any rise in your dough.
Some recipes say to let dough rise for just an hour - I let mine rise for 2 hours. You basically want the dough to double in size. My mom told me she used to let it rise for one hour, then knead it once more and let rise for another hour. I did not do the extra kneading, and it turned out just fine.
While the dough is rising you can make the streusel topping and then place in the fridge until you are ready to use it.
For streusel topping you will need the following
200 grams - all purpose flour
150 grams - regular granulated sugar
125 grams - unsalted butter - softened
1 to 2 tsp - vanilla extract ( I think 2 tsps. of vanilla tastes better) - you can also use a packet of vanilla sugar
Optional addition - 1 tsp. almond extract ( almond is not typical for streusel, but this is how my mom used to make it)
Follow directions how to make streusel topping
Once the dough has risen to double in size, you want to do a very lightly kneading and roll or stretch gently to fit into your pan.
Make sure to lightly grease and flour your baking pans - then once dough is fitted into the pan - cover with a cloth and let it sit for another 15 to 20 minutes.
Then top dough with desired toppings - apple slices, apple sauce, peach slices, plums and top fruit with streusel. You can also make this with just streusel topping - but add a few bits of butter to top - this will help.
Bake in a pre heated oven at 375 to 390 F ( 180 to 200 C) for 20 to 25 minutes - depending how thick the dough is - if it is thicker than maybe 25 to 30 minutes. Juts make sure it does not burn on bottom and you can insert a toothpick and if it comes out clean then it is done.
Allow to cool completely on a rack before serving. I think this cake tastes best the day you make it - but you can store it for a couple days in air tight container or store longer in fridge.

rechteckige 20er Form / 9inch rectangular baking pan
Ingredients Dough
4 cups flour
½ cup sugar
½ cup vegetable oil
pinch of salt
1 1/3 cups milk, lukewarm
1.5 oz fresh yeast
Ingredients Crumbs
3 ½ cups flour
1 ¼ cups butter, room temperature
1 ¼ cups sugar
Zutaten Teig
500g Mehl
100g Zucker
300ml Milch, lauwarm
100ml Sonnenblumenöl
1 Würfel Hefe
Prise Salz
Zutaten Streusel
400g Mehl
250g Zucker
250g Butter, zimmerwarm
Instructions Dough
1. dissolve yeast in lukewarm milk and let it sit for 10 min
2. place flour with sugar, oil and salt into a bowl
3. add yeast milk and knead until everything is incooperated
4. cover and let rise for 60 min
5. cover your workface with flour and roll out dough
6. grease your baking pan (or baking sheet) and place dough on it
7. cover and let rise for another 20 min
8. brush water onto the surface of the dough
9. add crumbs and bake at 390° for approx. 30 min
Instructions Crumbs
1. mix all ingredients and form chunks
Zubereitung Teig
1. löst die Hefe in lauwarmer Milch auf und lasst sie 10 min gehen
2. gebt Mehl, Zucker, Öl und Salz in eine Schüssel
3. fügt die Hefemilch hinzu und knetet mit einem Knethaken oder den Händen bis sich ein homogener Teig formt
4. abdecken und für 60 min gehen lassen
5. bemehlt eine Arbeitsfläche und rollt den Teig aus
6. die Backform/Backblech buttern und Teig hineingeben
7. abgedeckt weitere 20 min gehen lassen
8. anschließend Wasser auf die Oberfläche bürsten
9. nun die Streusel daraufgeben und bei 200° Ober/Unterhitze für ca 30 min backen

1. alle Zutaten (am besten mit der Hand) vermischen und Streuselstücke formen

German Plum Cake with Streusel (Crumble) ✪ MyGerman.Recipes
I really love Plum Cake, especially with crumbles (Streusel). This version is made with a yeast dough and is the version you will most likely get at a bakery in Germany. Another version is made with a different dough and I hope I can show that one next year, right now I don't have any additional plums for that.

All-Purpose Flour: 1 1/2 cup
Caster Sugar: 3/4 cup
Oil: 1/2 cup
Eggs: 2
Baking Powder: 2 tsp.
Salt: 1/4 tsp.
Milk: 1/4 cup
Vanilla Essence: 1/4 tsp.
Tart Red Apples: 2 medium sized
For the Strudel/Streusel
All-Purpose Flour: 3 Tbsp.
White Sugar: 2 Tbsp.
Brown Sugar: 2 Tbsp.
Butter: 1/4 cup (softened)
Salt: 1/4 tsp. (if the butter is unsalted)
Cinnamon Powder: 1 tsp.
Toasted Walnuts: 1/4 cup (chopped)
Greased and floured 8-inch cake pan.
Bake in a preheated oven on 180C/350F/Gas mark 4 for 40-50 mins or till the tester inserted comes out clean. My oven is fan-forced.
