How To make Golden Millet Porridge
1 1/2 c Millet, uncooked
1 c Diced sweet vegetables *
5 c Water
1/4 ts Sea salt
* Sweet vegetables may be any combination of onions, carrots, butternut squash, yams or parsnips. DIRECTIONS ========== Place all ingredients in a large saucepan and bring to a boil. Cover, reduce heat and simmer mixture until water is absorbed and millet and vegetables are tender, about 25 minutes. Per serving: 122 cal, 4 g prot, 156 mg sod, 27 g carb, 1 g fat, 0 mg chol, 21 mg calcium

Pearl Millet (also called as Kambhu in Tamil, Bajra in Hindi) is one of the oldest millet used by our ancestors. It is known to have very high fiber content which makes it healthier. It has High iron content, High Zinc content, High fiber, Flavonoids, phenolics Omega 3 fatty acids, etc and has Low glycemic index.
Kambhu koozh or pearl millet porridge... porridge is generally a simple recipe and less time consuming... this millet porridge can be prepared in the night, ferment overnight and morning instant breakfast is ready in minutes.. this can be carried to office for lunch too.. this porridge gives excellent energy through out the day. this preparation method makes this very easily digestible..helps to reduce the stomach fat and belly... do try and let me know the feedback...
Ingredients: Pearl Millet Porridge
Pearl Millet - 1/2 cup
Water - 2.5 cups
Butter Milk - as required
Salt
curry leaves,carrot, onion, ginger and coriander leaves to garnish
wash and clean well
soak in warm water overnight or for 12 hours..
you can reduce soaking time to 4 - 6 hours..
but 12 hrs soaking time ensures better absorption of nutrients
soaking millet is very important to neutralize inhibitors,
avoid digestion issues and enhance better nutrient absorption..
next day, filter soaked millet and grind to coarse rava you can prefer to buy pearl millet rava and soak
Let it cook well.. takes about 15 to 30 minutes
keep stirring to avoid burning at the bottom
give sufficient time for the millet to cook
pearl millet is difficult to digest if not cooked properly
[serve Pearl Millet Porridge with your favourite side dish like pickle, vathal, vadagam or fryums

Warm Blueberry Millet Porridge for Breakfast (Vegan and Gluten-free)
This Blueberry Millet Porridge recipe is a refreshing 4-ingredient alternative to the classic oatmeal. In combination with blueberries, it is a perfect breakfast to kick-start your day. Cooking millet for breakfast is easy and the outcome is somewhere between rice pudding and oatmeal. Closer to which end is only depending on your taste. This version is one of my go-to vegan millet recipes for breakfast.
The perfect way to cook millet porridge -
The golden ratio (according to my opinion) is using 1 cup millet and 4 cup liquid. For maximum creaminess use 4 cups of dairy-free milk. A more frugal approach would be 1 cup millet - 2 cup water - 2 cup milk. I don't recommend to increase the water part any further otherwise, you might end up with cooked millet as a side dish, not as breakfast.

Are you tired of making the same regular kind of Porridge? Then here is a brand new recipe on how to make a Finger Millet Porridge which tastes much better then the regular one, it's delicious as well as healthy ! Watch Anushruti making this recipe which will be a treat for your taste buds
Ingredients: (Serves 1)
2 tbsp finger millet or Nachni or Ragi flour
250 ml (1 cup) Milk
1 ½ tbsp to 2 tbsp Jaggery
Cardamom powder made from the seeds of 2 Cardamom pods
Roasted almonds (optional)
Method:
-In a pan, put in the flour and roast for about 2 to 3 minutes. Turn off the heat and allow to cool down a bit.
-Stir in the milk and mix well until there are no lumps
.-Turn on the heat again and cook until the porridge becomes thick and acquires a creamy consistency.
-Turn off the heat and mix in the jaggery and the cardamom powder.
-Pour into cups or mugs and garnish with the roasted almonds.
Tip : You can adjust the consistency of the liquid or milk to get the desired consistency. Use more milk for a thinner consistency to serve as a drink.
