MUSHROOM IN CHEESE SAUCE
Preparation time: 5 minutes
Cooking time: 10 minutes
Serving: 2
Ingredients
For Mushroom
1 tsp Butter , मक्खन
1 inch Ginger, chopped , अदरक
2 Green chillies, chopped, हरी मिर्च
1 tbsp Kasuri methi, कसूरी मेथी
½ medium Green bell pepper, medium dice , हरी शिमला मिर्च
½ medium Red bell pepper, medium dice, लाल शिमला मिर्च
10-12 small Button Mushrooms , मशरूम
Prepared white sauce, वाइट सॉस
Salt to taste , नमक स्वाद अनुसार
¼ tsp Black pepper, freshly ground, काली मिर्च
For white sauce
1 heaped tbsp Butter, मक्का
1 heaped tbsp Maida, मैदा
1 cup Milk, दूध
1 Black cardamom seeds , बड़ी इलायची के बीज
For toast
3-4 sliced Brown bread , ब्राउन ब्रेड
½ cup Processed cheese, grated , चीज
For garnish
Microgreens or fresh Coriander leaves , माइक्रोग्रीन्स
freshly ground Black pepper, काली मिर्च
Process
For Mushroom
Firstly apply some wheat flour/atta to the button mushroom and rubber it properly and then wash it with water.
After that remove the stems from the mushroom and keep it aside for further use.
Now in a pan add butter and the washed mushroom, saute it for a minute and let it cook until light golden brown once cooked add some salt and remove and let it cool down.
Now take the sauteed mushrooms and cut them into quarters (4) and keep aside.
In the same pan add butter, ginger, green chillies, kasuri methi and saute it for a minute.
Add green bell pepper, red bell pepper, mushroom and saute it for 2-3 minutes, then add the prepared white sauce, salt, pepper and mix it well.
For toast
Toast the bread slices in the toaster and then cut off the edge of the bread.
Now start plating it by placing one toasted bread then add the mushroom mixture, some grated cheese and then repeat this process for two times and then garnish it with some microgreens and freshly ground black pepper.
For white sauce
In a pan add butter, maida and cook it for a minute then in this hot mixture add room temperature milk and whisk it properly without lumps.
Now add some black cardamom seeds, mix it properly and keep it aside for further use.
FOR MUSHROOM RAITA DIP
Preparation time: 5 minutes
Cooking time: 10 minutes
Serving: 4
Ingredients
For Mushroom
1 tsp Butter , मक्खन
½ tsp Cumin seeds, जीरा
1-2 Green chillies, chopped, हरी मिर्च
½ cup Mushroom stems, chopped, मशरूम की डंठल
Salt to taste, नमक स्वाद अनुसार
For raita
1 cup Curd, दही
¼ cup Processed cheese, grated, चीज
Prepared sauteed mushrooms, तैयार मशरूम
For garnish
A pinch Red chilli powder, to sprinkle , लाल मिर्च पाउडर
A pinch Cumin powder, to sprinkle, जीरा पाउडर
Fresh Coriander leaves , धनिया पत्ता
Process
For mushroom
Firstly chop the stems removed from the mushroom and keep aside.
Now in a pan add butter, cumin seeds, green chillies saute for a minute and then add the mushroom stems and let them char a little and then add salt, mix properly and keep aside.
For raita
Add curd in a bowl and some grated cheese then add the sauteed mushroom stems and mix properly.
Remove it in the service bowl and garnish with red chilli powder, cumin powder and some fresh coriander leaves.
Serve chilled.

Creamy Mushroom Pasta, Ready in 15 mins!
A rich and comforting meat-free dinner of creamy pasta with lots of mushrooms. The sauce is luscious and thick, with a good sprinkling of parmesan (I've got an alternative for vegetarians), so it clings to the pasta beautifully.
It's ready in 15 minutes, so it makes a great weeknight dinner when you need food fast!

Ingredients:
▢300 g (10.5oz) tagliatelle or fettuccine - (I used thin egg fettucine for my version)
▢3 tbsp (45g) unsalted butter
▢1 tbsp sunflower oil
▢1 small onion - peeled and chopped finely
▢400 g (14oz) chestnut mushrooms, thickly sliced
▢3 cloves garlic - peeled and minced
▢½ tsp salt
▢½ tsp pepper
▢180 ml (¾ cup) strong chicken stock - (if you haven’t got homemade, water plus 2 stock cubes is fine) - use vegetable stock for vegetarian
▢180 ml (¾ cup) double (heavy) cream
▢50 g (½ cup) grated parmesan cheese - - use vegetarian Italian-style hard cheese for a vegetarian version
To Serve:
▢Small bunch fresh curly parsley - finely chopped
▢black pepper
▢grated parmesan - - use vegetarian Italian-style hard cheese for a vegetarian version
INSTRUCTIONS:
1. Cook the pasta as per the pack instructions, then drain, reserving 1 cup of the pasta cooking water.
2. Whilst the pasta is cooking, add 1 tablespoon of the butter and the oil to a frying pan and heat over a medium heat.
3. When the butter has melted, add the chopped onion. Cook for 2-3 minutes, stirring often, until the onions are just starting to soften.
4. Add the remaining 2 tablespoons of butter to the pan with the onions and melt.
5. Add the mushrooms, garlic, salt and pepper to the pan and cook for 3 minutes, stirring often, until lightly softened.
6. Stir in the stock and cream and bring to the boil. Simmer gently for 3 minutes, until slightly thickened.
7. By now your pasta should be ready. Add the pasta to the pan, then sprinkle over the parmesan.
8. Use a set of tongs to lift and drop the pasta in the mushroom sauce, until the pasta is fully coated in the sauce.
9. If you would like to loosen up the sauce a little, add in splashes of the reserved pasta water, until the sauce consistency is to your liking.
10. Divide between bowls and top with chopped parsley and an extra sprinkling of black pepper and grated parmesan.

Mushroom Chow Mein with Sweet Sauce | Veg Chowmein Recipe
⌲ Ingredients:
Water: Two Jugs
Salt: As Per Taste
Oil: One Tbsp
Yellow Food Color: Half Tsp
Noodles: 250 Grams
Oil: Two Tbsp
Garlic Paste: One Tsp
Mushrooms: 100 Grams
Capsicum: One (Slices)
Onion: One (Slices)
Green Onion: Two (Slices)
Salt: As Per Taste
Black Pepper: One Tsp
White Pepper: Half Tsp
Soy Sauce: One Tsp
Hot Sauce: One Tsp
Oyster Sauce: One Tsp
Oil: One Tsp
Onion: Half (Chopped)
Garlic Ketchup: Two Tsp
Tomato Ketchup: Two Tsp
Sugar: Three Tsp
Jalapeno: Five To Six Pcs
Water: Two Tbsp
⌲ The Method of Preparation
✔ Step One:
Pour water in a pot
Then add salt, oil and food color to it and boil the water
Let the water boil
Then add the noodles and cover it on low heat
After five minutes, rinse the noodles with water
Then cover and cook for another eight minutes on low flame
✔ Step Two:
Now heat oil in a pan
Then add garlic and fry for three minutes
Now add capsicum, onion and green onion and mix it
Then add salt, black pepper, white pepper, soy sauce, hot sauce and oyster sauce and cook for four to five minutes.
Now add the boiled noodles and mix well
And keep covered on low flame for five minutes
✔ Step Three:
Heat oil in a pan
Add onion and cook for a minute
Then add garlic ketchup, tomato ketchup, sugar and jalapeño and mix it
Add water and cook for two minutes
Then take it out in a separate vessel
Delicious mushroom chowmein and sweet chutney is ready
Serve as you like

About Stroganoff
The dish is named after one of the members of the influential Stroganov family. A legend attributes its invention to French chefs working for the family, but several researchers point out that the recipe is a refined version of older Russian dishes.
Mushroom Stroganoff or Mushroom Stroganov (UK: /ˈstrɒɡənɒf/, US: /ˈstrɔːɡənɔːf, ˈstroʊɡ-/; Russian: бефстро́ганов, romanized: befstróganov,[1] IPA: [bʲɪfˈstroɡənəf]) is an altered version of Russian dish, consists of sautéed pieces of mushrooms served in a sauce of mustard and smetana (sour cream). Mushrooms are common in many variants.The sauce is a simple roux mixed with prepared mustard and broth, and finished with a small amount of sour cream.Stroganoff's popularity extends to Japan, where it is most commonly served with white rice, or white rice seasoned with parsley and butter.
