How To make Grilled Cheese Pita Pockets
1 Whole-wheat or plain pita
1 oz Sliced, reduced-fat cheese
-(Jarisberg, Monterey Jack, -Cheddar or mozzarella) 3 sl Tomato, paper-thin
1/3 c Alfalfa sprouts
4 sl Dill pickle, paper-thin
3 Bell pepper rings, red,
-yellow, or green; paper -thin; seeds, stems and ribs -removed Vegetable-oil cooking spray Cut a thin strip from one side of the pita. Carefully open the pita to make a pocket for the filling. Place one slice of cheese in the pita pocket. Slide in the tomates; add the alfalfa sprouts and top with the pickle slices and pepper rings. Then add the remaining cheese slice. Heat a medium (8-10") skillet over medium-high heat until hot enough to evaporate a drop of water upon contact. Spray with a vegetable-oil cooking spray. Add the sandwich; cook, covered, over medium-low; heat, turning once, until browned on both sides, about 10 minutes. Nutritional analysis per serving: 206 calories; 7 grams total fat; 13 grams protein; 25 grams carbohydrates; 19 milligrams cholesterol; 601 milligrams sodium.

Easy grilled meat Pita Pockets - Lebanese Arayes with a spiced meat filling
Lebanese Arayes are pita pockets that take 20 minutes to make and grill. They have a tender and delicious spiced meat filling that makes for a great treat. I'll show you how to make the filling and what kind of bread to use.

Ingredients:
5-6 Flat breads (pita or Lebanese bread
500g (1lb) Minced Beef (or you can use lamb)
30g (1oz)Parsley
1 Medium brown onions
1-2 Garlic Cloves
1 1/2 Tbsp Pomegranate Molasses
1-2 Tbsp oil + more
1 Tsp salt
1/2 Tsp Boharat
1/4 Tsp pepper
1/4 Tsp Cayenne
1/8 Tsp Cinnamon

Directions:
To make the meat filling:
1. Add your Onion and parsley to a food processor or blender, and process till very finely chopped
2. Combine meat and remaining ingredients (apart from the bread) in a mixing bowl and mix thoroughly until well combined
3. Cook a small piece of the meat in a pan and taste for seasoning. Adjust if necessary
To prepare the Arayes:
1. For the pita, microwave the bread for 30 seconds and then slice into pockets or quarters
a. If using Lebanese bread there is no need to microwave
2. Use a knife to pry both sides of the bread apart till a pocket has formed
3. Add a few tablespoons of the meat filling to each pocket and massage to the edges of the bread. Aim to have the Pita about 1cm (1/3in) thick, or 1/2cm (1/6in) thick for the Lebanese bread. Stuff the bread pieces till you have used up the meat mixture
4. Use a brush to oil both sides of the bread generously with olive oil
To cook the Arayes:
1. Preheat a grill pan on medium high heat and when ready add your Arayes to the pan
2. Grill for 4 minutes (3 for Lebanese bread) and then flip once they start to sizzle
3. Cook for a further 4 (or 3) minutes and then remove from the pan
Prepare a simple chopped parsley and onion salad and serve the Arayes.

Ingredients
For chicken marination
1kg chicken
1 tbsp Ginger garlic paste
Salt to taste
1 tbsp crushed black pepper
1 lemon's juice
For Sriracha-mayo
250ml mayo (1 cup)
3 tbsp Sriracha sauce
4 tbsp ketchup
For pita dough
250ml + 130ml warm water
1 tsp sugar
7g yeast
4 cups flour (500g approximately)
2 tsp salt
3 tbsp oil
For salad
Chopped red onion and cucumber

How to bake cheese stuffed flatbread in the oven?
Bake cheese stuffed pita bread in the Oven: Before shaping the pitas, heat the oven to 450°. If you have a baking stone, put it in the lower rack of oven to heat. If you don’t have a baking stone, place an oven safe large baking sheet on the lower rack to heat (five minutes prior to baking).
When ready to bake, gently lift a pita disc, with your fingers or a large spatula, and flip it onto the hot baking stone (if your stone is large enough you can bake more than one at a time).
Flip the dough so that the side that was resting on the counter is now facing up. You want the the side that has been exposed to air (the dry side) to be down on the baking stone and the side that is more doughy and moist to be facing up – this helps the pita puff up. If you bake one or two and they aren’t puffing, spritz the top of the pita round with a light mist of water before baking.
Baking Temperature and Duration
Bake at 450 F for 3-4 minutes. The bread should all puff up in the initial 3-4 minutes of baking. If not, bake for another minute. If at 5 minutes the bread still doesn’t puff up, your oven is probably not hot enough and you may want to increase the temperature to 500 Fahrenheit for the next batch.
When the pita breads are all puffed up, transfer the baking sheet to the middle rack or a higher rack (a little more closer to the heating coils) and bake for another 1-2 minutes, or until the bread turns golden brown.If we don’t take the pita bread to the upper rack,then the pita bread won’t get browned and the longer they stay in the bottom rack,the pita bread get harder.
Remove the baked cheese stuffed bread and wrap with a kitchen towel to keep them soft. Repeat the baking steps with the rest of the dough discs.
