How To make Grilled Chicken Breasts with Mango Salsa
6 Chicken breast halves,
-boneless 2 tb Dark soy sauce
2 tb Salad oil
2 tb Honey
2 tb Fresh, strained lime juice
1/2 ts Salt
1/4 ts Cayenne pepper
MANGO SALSA:
2 Mangos (about 1 lb. each) **
1/2 c Finely diced red onion
1/2 c Cucumbers - see instructions
2 Peppers, seeded and diced
Juice of two limes 1/2 ts Salt
---------------------------BASIC-CAPER MAYONNAISE--------------------------- 2 Egg yolks
1 1/2 tb Strained fresh lime juice
1/4 ts SALT, HEAPING
Cucumbers should be finely dice, unpeeled.- Trim the chicken breast halves of all fat and gristle and separate the tenderloin. Mix soy, oil, honey, lime juice, salt, and cayenne in a shallow dish just large enough to hold the chicken in one close layer. Marinate the chicken in this mixture for 1 hour at room temperature or for several hours the refrigerator, turning several times. Grill the chicken breasts for 3 to 4 minutes per side, the tenderloins about 2 minutes per side. The chicken may also be sauteed over moderate heat in a skillet lightly filmed with oil. The bottom of the skillet will darken as the honey caramelizes but is easily cleaned. Cut the breasts in thick slices and fan on dinner plates, placing the tenderloins along side. Spoon the salsa over the top and drizzle with the mayonnaise. MANGO SALSA Slice the mango flesh from each side of the pit. One half at a time, make an inch cut just inside the skin, then score the flesh in 3/8-inch cubes. Turn skin inside out and free the mango flesh with the knife. Cut the cubes in inch dice, reserving any mushy pieces for some other use. You should end up with about 1 1/2 cups. Combine mango with all remaining ingredients and let sit 30 minutes to blend flavor. ** Note: 1 1/2 Cups peach or papaya dice may be substituted for the mango.

For marinade
-1/4 cup olive oil
-2 limes juiced
-4 fresh garlic cloves smashed
-salt and pepper
-chicken breast boneless skinless
For salsa
-2 scallion chopped
-1 red pepper chopped
-1 mango cut into cubes
-cilantro for garnish
-1 avocado to eat with the meal (shown)

Grilled Chicken with Pineapple Mango Salsa

This minimal ingredient meal uses Heinen’s premade and packaged pineapple mango salsa, which works beautifully as a fruity marinade. Garnish with more salsa and fresh local produce to amplify the classic grilled chicken dinner!
Grilled Chicken with Pineapple Mango Salsa
Serves 4
Ingredients:
4 Gerber's CARE Certified chicken breasts
Juice of ½ lemon
3 Tbsp. Heinen's olive oil
1 lb. Heinen’s pineapple mango salsa
2 yellow bell peppers, seeded
Large fresh mango, diced for garnish
Large fresh pineapple, diced for garnish
Cilantro and green onions, for garnish
Salt and pepper, to taste
Instructions:
1. Add the chicken to a plastic bag along with the lemon juice, oil, ½ of the pineapple mango salsa, salt and pepper. Mix to combine. Marinate in the refrigerator for 30 minutes.
2. Preheat the grill to high (450°F to 550°F).
3. Place the chicken on the grill and cook for 5 -6 minutes per side, or until cooked through and dark grill marks have formed.
4. Flip the chicken and add the bell peppers to the grill. Cook until lightly charred.
5. Remove everything from the grill and slice the chicken. Large dice the bell pepper.
6. Serve the chicken garnished with the additional salsa, large diced peppers, mango, pineapple, green onions and cilantro.

Ingredients Needed: (All ingredients listed is based on using 5 Corn Cobs)
- El Yucateco Caribbean Sauce (1.5 ounce)
- 1 small, cored fresh pineapple (sliced)
- 1 fresh Mango (sliced and skinned)
- 1/2 red onion (sliced in half)
- 1/2 Jalapeno Pepper (sliced in half and seeded)
- 3 tablespoons Lime Juice
- 1/2 cup rough fresh chopped Cilantro
- 1/2 teaspoon or a pinch of Cinnamon
- Salt to taste
GRILLED CHICKEN BREAST OPTIONAL (I will place those grill instructions below)
Instructions:
Always wash your hands before prepping any food recipe, and thoroughly wash all vegetables with cold water!
Preheat your grill (make sure grates are clean) to medium heat (300-400 degrees Fahrenheit). Place Mango, Pineapple, Onion, Jalapeno on grill and turn occasionally as it develops color and char. Repeat until corn has color, char and tenderness which will take 10-15 minutes normally. Once done, remove from grill and place in blender along with the remaining ingredients. Blend gently until smooth. Pour into a bowl and place into fridge for a few hours to overnight (the longer the better). You can serve this any way you like but I served it with a Grilled Chicken Breast (instructions below) ENJOY!
FOR GRILLED CHICKEN:
Trim chicken, season both sides with your favorite seasoning (I use equal parts salt, pepper, garlic powder, onion powder, chili powder). Grill at medium heat flipping once or twice until you reach a safe temperature of 165 degrees Fahrenheit in the deepest, coolest part of the chicken breast. I recommend using a meat thermometer to be sure you don't overcook OR under cook the chicken. THIS PAIRED GREAT WITH THE MANGO SALSA!
