????????????????SIMPLE Japanese Grilled Eggplant Recipe | I COOK 4 U
This is a perfect little side dish. Simple dish but with an amazing taste!
INGREDIENTS:
- 2 eggplants
FOR THE SAUCE:
- 1 tbsp soy sauce
- 1 tbsp sake, japanese rice wine
- 1 tbsp mirin
- 2 tbsp water
- 1 tbsp brown sugar
- 1 tsp. corn starch, dissolved in water
- 1 tsp. sesame oil
- 1 small piece of ginger, rubbed with a grater
- 1-2 shallots, finely cut into rings
- 1 stalk green onion, cut finely
- red bean sprouts for garnishing
INSTRUCTIONS:
FOR THE SAUCE:
Mix soy sauce, sake, mirin, water and brown sugar together in a glass container.
Cook the sauce mixture in a pot, until the sugar dissolves.
Then add cornstarch and stir constantly until the mix is slightly thickened.
Mix it with sesame oil, green onions shallots and grated ginger, then set aside.
EGGPLANTS:
Slightly cut the eggplants around the top, bottom and lengthwise so that it’s easier to peel off the skin after grilling.
Grill the eggplants on high heat over wire rack. Grill until the skin is completely burnt and the eggplant becomes wilted.
Start peeling the skin quickly off before the purple color transfers to the nice green eggplant color.
Cut the eggplants into pieces, put them into a serving plate with the sauce, garnish with shallots green onions and beans sprouts.
Ready to serve…is simply delicious !!
???????? Japanese comfort food : Grilled eggplant with miso 焼きなすみそ
It’s not often on the menu, but if you find a local izakaya run by a granny or an older couple, you’re heading towards the odds of finding this simple but scrumptious menu item. But warned, it’s usually scalding hot so wait before chowing down. @KingKogi
Eggplant and soy sauce side dish (가지나물)
Gaji-namul is a simple, delicious, everyday Korean side dish, meant to be eaten with other side dishes and rice.
It’s one of my favorites. I love the fresh taste, soft texture, and the beautiful vibrant purple color of the dish on the table. It's refreshing and goes well with oilier items to offset their texture and taste. I never get tired of it!
If you are a vegetarian, replace the fish sauce with soy sauce.
