Make small slits in each medallion with sharp knife, then slip a slice of garlic into each slit. Sprinkle with a little of the rosemary, and grill. Meanwhile, put the asparagus in a second health grill pan, with just enough water to fill the grooves. FULL RECIPE:
Asparagus stuffed Pork Loin with Green Peppercorn Gravy
Pork Loin stuffed with Asparagus
1 pork loin – as thick as you can get
4 – 8 asparagus spears depending on thickness
Clean any silverskin from the tenderloin
Placing a sharp knife against the pork about 1inch above the cutting board slice into the meat and roll the lion so that you create a 1inch thick ‘steak’
Snap the asparagus and trim the ends then place the spears lengthwise on the meat
Roll the pork around the asparagus and tie with butcher’s twine
Place in an oiled baking dish
Bake at 350F for 20 to 30 min
Turn on the broiler and leaving the dish in the center of the oven broil for 5 to 10 minutes until the pork starts to take on a nice browned colour
Green Peppercorn Gravy
1tblsp butter
1 large shallot chopped small
1 ½ tbsp. – ¼ cup green peppercorns drained
1/4cup red wine
2 tbsp plain flour
1 ½ cups beef stock
Melt the butter in a sauce pan on low heat
Add the shallots and cook until soft – about 2 minutes
Add the wine and increase the heat so the liquid starts to boil
Simmer until most of the liquid is gone
Add the flour and stir continuously for about 2 minutes – if it starts to burn remove from the heat
Slowly pour in the beef stock while stirring
Bring to the boil and reduce heat to medium low.
Simmer for about 5 minutes stirring occasionally until gravy has thickened slightly
