Gulai tulang rusuk dengan umbut pisang sangat popular di kampung kampung di Baling Kedah dan setengah Kampung di Perak. Selalunya semasa kenduri di Kampung lembu atau kerbau akan disembelih. Setelah isinya diambil untuk dibuat lauk, tulang yang berlebihan akan dibuat gulai dengan umbut pisang untuk menjamu Kendara.
1.300g tulang rusuk direbus sehingga lembut
2.2 batang umbut pisang dikupas dan diambil bahagian yang lembut sahaja.
3.1/2 cawan rempah kari dicampur dengan air
4. Santan dari sebiji kelapa
5. 3 serangkai
6. 1 biji bawang besar, 3 biji bawang merah, 5 ulas bawang putih, 1/2 inchi halia dihiris.
7. 3 batang daun kari. 1 untuk menumis dan 2 untuk hiasan
8. 3 batang daun ketumbar.
9. 1 keping asam gelugor.
10.2 batang serai.
11.1/ 2 cawan minyak.
Cara- cara
1.Panaskan kuali dan masukkan minyak.
2. Masukkan bahan hirisan tadi.
3. Masukkan daun kari dan 3 sekawan apabila bahan- bahan diatas sudah garing.
4.Masukkan rempah dan masak selama lebih kurang 30 minit diatas api yang sederhana. Masukkan santan.
5.Masukkan umbut diikuti daging dan biar sehingga masak.

Di Negeri Kedah, Ikan nyiuk - nyiuk selalunya dibuat gulai dengan kacang lendiaq. Gulai saya tidak pakai santan , agak cayaq dan masam. Bagi saya, ikan nyiuk - nyiuk lebih sedap dari ikan bawai.
1 ekor ikan nyiuk nyiuk sederhana besar (dalam 500g di potong 3)
2.1 cawan rempah kari ikan dicampur dengan 1 cawan air kelapa dan sedikit minyak.
3. 1/2 inchi halai, 3 ulas bawang putih, 3 biji bawang merah, sebiji bawang besar dihiris halus.
4. 1/2 cawan minyak.
5. 1 sudu besar minyak sapi
6. 2 tomato
7. 9 bendi kecil
8. 3 helai daun kari dan 3 helai daun ketumbar.
9. 1 sudu besar *halba campur.
10. Garam secukup rasa.
11. 2 camca besar pes asam jawa.
Cara- cara
1.panaskan kuali dan masukkan minyak.
2. Tumis bahan hirisan sehingga kuning
3.masukkan halba campur dan daun kari dan batang daun ketumbar.
4. Masukkan rempak kari dan masak diatas api sederhana selama 40 minit.
Masukkan air asam jawa dari 2 camca besar pes.
5. Setelah mendidih masukkann ikan.
6. Masukkan garam secukup rasa.
7. Sementara ikan masak , celur kacang bendi dengan air panas dan biar 5 minit. Tapis.
8.Tutup api, masukkan minyak sapi, bendi dan tomato yang dibelah empat.
9. Tabur daun kari dan daun ketumbar yang selebihnya.

Bihun sup ni istimewa pasai bihun ni warna kuning sebab direndam dengan kunyit bukan dengan bahan pewarna.
Sup untuk bihun ini sangat sedap sebab kita guna tulang rusuk yang direbuih dengan rempah ratus tanpa bahan perasa sehingga daging dia cayaq didalam mulut. Sambainya pulak sangat ringkas kerana cabai yang dikisar, ditumeh dengan sikit minyak agak lama sehingga masak. Garam dan asam gelugok saja di masukkan.
Lagi special bihun ni bila kita nak makan kita letak hirisan daging ribeye yang sudah dibakaq sepenuhnya.
Bahan bahan
1. 1 kilo tulang rusuk direbus sehingga empuk dengan 1/2 inchi halia, 2 biji bawang besar, separuh dari 3 sekawan, 1 batang daun bawang dan satu batang daun sup.
2. 200 g daging rib eye dibakar Sepenuh Masak
3.1 cawan cili kisar
4.1 keping asam gelugor
5.1 cawan bawang goreng
6.1 sudu lada putih
7.2 sudu teh serbuk kunyit
8.1/ 2 cawan lobak masin
9. 2 liter air untuk merendam bihun.
10. 2 sudu besar minyak masak.
11. Garam secukup rasa.

Beef Goulash Stew or Soup recipe in Instant Pot or Pressure Cooker or Dutch oven. Amazing Goulash!!!
This is step by step recipe on how to make Beef Goulash Stew or Soup in Instant Pot or Dutch Oven. You absolutely must try this recipe! Recipe is simplified for beginners.
After making a very traditional Hungarian dish called Chicken Paprikash a few weeks ago, I have received multiple requests from subscribers to make another even more famous classic Hungarian dish called Goulash. There are some variations of this dish depending on the region and the country. For example in the US, goulash is known as a quick dish made from ground beef, tomato sauce, herbs, and elbow macaroni noodles. Sometimes also called slumgullion.
But the original classic Hungarian version of goulash is a rich, red beef stew flavored with vegetables, onions, garlic and of course, paprika.
( a lot of it…preferably sweet Hungarian paprika ).
The word gulya means 'herd of cattle' in Hungarian, and gulyás means 'herdsman' or 'cowboy'.
Goulash is a very comforting dish, very easy to make and in today's recipe I will show how to make an amazing Hungarian style goulash in the Instant Pot. If you don’t have an Instant Pot, I will also share on how to make this dish in the dutch oven, which is a bit of a longer process.
Ingredients: ( as a stew or soup ~5; in combination with noodles or dumplings 7-8 )
Stew beef - 3 lb
Onions ( chopped, medium size ) - 2 pcs
Bell peppers ( chopped ) - 2pcs
Garlic ( minced ) - 5-6 cloves
Carrots ( chopped, medium size ) - 2pcs
Potatoes ( cut on 1” cubes, medium size ) - 5pcs
Avocado or olive oil ( to brown meat and saute vegetables ) - 2 tablespoons
Hungarian paprika ( sweet ) - ¼ cup ( feel free to add even more if you like )
Beef stock - 2 ½ - 3 cups ( if you want more soupy texture, add 1 more cup )
Diced tomatoes - 1 can ( 14.5oz )
Salt and pepper - season meat and + to taste
Flour - 2 tablespoons ( mixed with 1 tablespoon of water ), alternatively use 1 tablespoon of cornstarch
Caraway seeds ( optional ) - 1 teaspoon
To garnish: parsley and sour cream
Serve with: with fresh bread as a stew or soup, or with noodles, potatoes, or spaetzle

Preparation steps:
Step #1
Chop onions, bell peppers and carrots. Mince garlic and cut potatoes on 1 inch cubes.
Turn on Instant Pot to saute mode, add some oil and brown the meat in batches. Season the meat in the process. Cook for about 5 minutes, just to brown, no need to cook it through.
When browned, remove the meat from the Instant Pot.
Add remaining oil to the pan and saute onions and peppers until onions are translucent. Now add garlic and saute for another minute.
Add a little bit of beef broth and deglaze Instant Pot. Always remember to deglaze after sauteing and before pressure cooking to avoid burn message on your Instant Pot.
Now, turn off your Instant Pot.
Step #2
Now you can add remaining ingredients to the pot except flour. I added 2 ½ cups of broth, but if you want to make a more soupy texture of this dish add 3 ½ or even 4 cups of broth instead.
For this recipe use original sweet Hungarian paprika which has a nice, rich and sweet red pepper flavor.
Pro tip: Never put paprika in a very hot pot, paprika burns very easily and will become bitter. So add it to a cooler pot or to a liquid.
Now, close the lid, turn on Instant Pot on high pressure for 25 minutes. Allow Instant Pot to release pressure naturally for about 15 minutes, and then release remaining pressure manually.
Taste to see if you need to add more salt.
And finally, if you want to thicken the sauce, turn on saute mode, add flour or cornstarch mixture and simmer it for about 5-7 minutes or until sauce thickens.
You can serve it with fresh bread as a stew or a soup, or with noodles, potatoes, or Hungarian dumplings.
Now, if you don’t have an instant pot and want to make this dish in a dutch oven, the process is almost the same. For the Dutch oven I will need to add more broth, about 5 cups, since during the long simmering process a lot of liquid will evaporate. Simmer meat in a broth with spices for about 40 minutes and then add potatoes and carrots and simmer for another 40 minutes or until beef is nice and tender.
So for this recipe using instant pot I was able to save myself about 30-40 minutes in cooking time.
