How To make Ham & Cheese Potato Skins
1 x Basic Potato Skins recipe
1 t Dijon or spicy mustard
1/4 lb Thinly sliced ham
2 oz Roasted red peppers -or-
2 oz Whole pimentos
1/2 c Monterey Jack cheese shreds
1 x Chopped parsley (optional)
Preheat oven to 400 degrees. Follow the recipe for Basic Crispy Potato Skins. Brush insides of potato skins with mustard. Drain and slice peppers or pimientos. Top with slices of ham and a few strips of pepper/pimiento. Sprinkle with cheese. Bake about 10 minutes on baking sheet, or until cheese is melted and bubbling. Sprinkle with parsley if you like. Makes about 2 skins per serving.

Bacon Cheddar Potato Skins
4 Large Baking Potatoes
8 Strips of Bacon- - cooked & crumbled
3 Tbsp Canola Oil
1 Tbsp Parmesan Cheese
1/2 tsp Salt
1/4 tsp Garlic Powder
1/4 tsp Paprika
1/8 tsp Pepper
1 1/2 C Cheddar Cheese - shredded
1/2 C Sour Cream
4 Green Onions- sliced thin
Baked Potatoes 350°
Rub potatoes with olive oil and sprinkle with salt. Bake for 1 hour.
Let potatoes cool. Cut potatoes in half and scoop out inside within 1/4 of the shell.
Place on greased baking sheet.
Combine oil, parmesan cheese, salt, garlic powder & paprika & pepper, Brush on potatoes.
Bake about 7 - 8 minutes turning half way through- Sprinkle with bacon & cheddar cheese. Bake 5 more minutes or until cheese
is melted. Serve with sour cream.

Baked Potato Skins
Recipe for baked potato skins. Fantastic for appetizers or for a get together, this easy to make recipe is sure to please your guests. I used russet potatoes for this recipe.
Ingredients:
Potatoes
Butter
Salt
Pepper
Green onion or chives
Cubed ham
Chopped mushrooms
Broccoli florets
Shredded cheddar cheese
Start by washing your potatoes and piercing them several times with a fork. Lightly coat with olive oil to help the skins crisp up and place in a preheated oven at 425 degrees Fahrenheit to bake for 55 minutes. Once cooked, remove the potatoes from the oven (be careful they'll be hot!) and slice length wise to create 2 pieces. Using a towel to hold the half, scoop out the inside of the potato. Save your potato filling to make mashed potatoes later! Add your chives or green onion, cubed ham, mushroom, broccoli florets, and top with cheddar cheese. Bake for an additional 20 minutes. Garnish with sour cream and parsley.
