How To make Potato and Cheese Lasagna
4 lg Sweet potatoes; peel
4 lg Idaho baking potatoes; peel
4 lg Red skinned potatoes w/skin
2 c Olive oil in a bottle; for
-drizzling, approx 3 tb Garlic; chop
2 c Cheddar cheese; grate
2 c Mozzarella; shred
Salt and black pepper Preheat oven to 350~. Oil bottom of an 8x10" baking dish. Using a vegetable slicer or very sharp knife, slice sweet potatoes as thin as possible. Slice baking and red skin potatoes as you need them, to prevent browning. Cover bottom of dish with a layer of Idaho potato slices, slightly overlapping. Drizzle with oil, sprinkle with garlic and cheeses and season with salt and pepper. Top with sweet potatoes, then red skin potatoes, seasoning and sprinkling each layer. Continue layers until all potatoes are used up, reserving enough cheese to fully cover top layer. Cover with foil and bake until potatoes are fork tender. Remove and let sit before cutting. Ingredients for Potato Lasagna Filipino Style
MEATY SAUCE :
2 tbsp Butter
4 cloves Garlic
50 gm Onion
250 gm Ground chicken
50 gm Red bell pepper
1/2 tsp Salt
1/2 tsp Ground black pepper
1/2 tsp Dried parsley
500 ml Spaghetti sauce (Filipino style)
WHITE SAUCE :
2 tbsp Butter
50 gm All-purpose flour
2 cups Full cream milk

ASSEMBLE :
3 pieces Boiled potato
1 cup Grated Mozzarella cheese
1/4 tsp Dried parsley
1/2 tsp Butter (for greasing the pan )

Ingredients
2 lb lean ground beef
½ cup diced onion
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 (6 oz) cans tomato paste
2 (6.5 oz) cans canned tomato sauce
½ cup water
2 tbsp white sugar
1 ½ tsp dried basil leaves
½ tsp fennel seeds
1 tsp Italian seasoning
1 ½ tsp salt, divided, or to taste
¼ tsp ground black pepper
4 tbsp chopped fresh parsley
16 oz ricotta cheese
1 egg ¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

4 cups flour
4 whole large eggs
5 large egg yolks

POTATO LASAGNA! This is so good!!! Even if you’re not gluten free you will love it. It was a huge hit in my house there were no leftovers. (Which sucked for me but I was happy they enjoyed it! )

Ingredients:
- 4-5 large potatoes, sliced thinly (I used yellow potatoes)
- 1 lb ground turkey
- 1 jar (24 oz) of your favorite marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1/2 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F.
2. In a large skillet over medium-high heat, add olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
3. Add ground turkey to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.
4. Add the marinara sauce to the skillet with the turkey and stir to combine. Let simmer for 5-10 minutes.
5. In a 9x13 inch baking dish, spread a layer of the turkey marinara mixture on the bottom.
6. Layer sliced potatoes on top of the marinara mixture, overlapping slightly.
7. Add another layer of the turkey marinara mixture on top of the potatoes.
8. Sprinkle a layer of shredded mozzarella cheese and grated Parmesan cheese on top of the turkey marinara mixture.
9. Repeat the layers of potatoes, turkey marinara mixture, and cheese until all of the ingredients are used up, ending with a layer of cheese on top.
10. Cover the baking dish with aluminum foil and bake for 45-50 minutes.
11. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden brown and bubbly.
12. Let the lasagna cool for 10-15 minutes before serving. Garnish with chopped fresh basil if desired.

For Meat Sauce
400 grams Ground Beef
1 medium Onion

1 can (400 grams) Chopped Tomatoes
1 can (400 grams) Tomato Sauce
Salt to taste
1 tsp Red Chili Powder (optional)
1 tsp Ground Black Pepper
2 tsp Dried Parsley
1 tsp Dried Oregano Leaves
For Bechamel Sauce
30 grams Butter
2 tbsp All Purpose Flour
240 mL Milk (warm)
1/2 tsp Salt
For the Layers
1/2 can (200 grams) Chopped Tomatoes
1 tbsp Olive Oil
5 medium Potatoes (scalloped & boiled)
Mozzarella Cheese
Meat Sauce (ingredients mentioned above)
Bechamel Sauce (ingredients mention above)
Sliced Cheese
Procedure:
Meat Sauce
1. Sauté onion & garlic. Add ground beef and cook until caramelized. Add salt & black pepper.
2. Add chopped tomatoes, red chili powder (optional), dried parsley, dried oregano leaves. Simmer for 1 hour. Add tomato sauce halfway through.
3. Set aside.
Bechamel Sauce
1. Melt butter in pan, add all purpose flour. Mix well.
2. Pour warm milk, stir continuously until slightly thickens. Add salt.
3. Set aside
Scalloped Potatoes
1. Peel and cut potatoes in scallops 3mm thick.
2. Boil potatoes for 5 minutes.
3. Set aside.
Layers
1. Chopped tomatoes (half can) at the bottom of pan. Add 1 tbsp olive oil. This will prevent lasgna from sticking at the bottom of pan.
2. Layer with scalloped potatoes (1st), mozzarella cheese (2nd), meat sauce (3rd), bechamel sauce (4th), and sliced cheese (last). Repeat for second layer.
3. Cover with foil (brush oil on inner part of foil).
4. Baked in pre-heated oven at 380 °F for 1 hour covered with foil and additional 10 minutes without foil.
5. Serve!
