6 ea SMALL SWEET POTATOES
2 tb OIL
1 t GARLIC POWDER
1 c CHOPPED ONIONS
1 tb MINCED GINGER ROOT
1 c CHOPPED GREEN PEPPER
1 tb HONEY
8 oz PINEAPPLE CHUNKS
1 c CHICKEN brOTH
1/2 ts CHINESE FIVE SPICES
1 tb CORNSTARCH
1 tb WATER
2 c JULIENNED COOKED HAM SLICES
1/2 c TOASTED ALMONDS
1 x SALT AND PEPPER TO TASTE
WASH SWEET POTATOES. PIERCE WITH A FORK SEVERAL TIMES. BAKE AT 3500F. FOR ABOUT ONE HOUR OR UNTIL TENDER. HEAT OIL IN SKILLET. SAUTE ONION, GARLIC, GINGER AND GREEN PEPPER UNTIL TENDER. ADD HONEY, PINEAPPLE CHUNKS, CHICKEN brOTH AND CHINESE FIVE SPICES. SIMMER FOR FIVE MINUTES. BLEND TOGETHER THE CORNSTARCH AND WATER UNTIL SMOOTH. STIR INTO THE brOTH. HEAT UNTIL BOILING, STIRRING UNTIL THICKENED. STIR IN HAM AND ALMONDS. SEASON WITH SALT AND PEPPER TO TASTE. HEAT THROUGH. PLACE HOT SWEET POTATOES ON PLATTER OR INDIVIUAL PLATES. CUT THROUGH SKIN AND COARSE MASH WITH A FORK. SPOON HAM ONTO POTATOES. SERVE IMMEDIATELY.

INGREDIENTS
1 medium to large sweet potato cubed
1/4 red onion finely diced
1/4 yellow onion finely diced
1/8 orange & yellow pepper diced
Smoked Paprika
Salt & Pepper
Olive Oil * substitute butter, coconut oil, or cooking oil preference
INSTRUCTIONS
1. Cube sweet potato and toss w/ olive oil & smoked paprika
2. Finely dice red & yellow onions
3. Dice orange & yellow pepper
4. Saute onions & peppers in olive oil until translucent (toss w/ Salt & Pepper)
5. Set saute veggies to the side
6. Using the same skillet coat the bottom w/ Olive Oil and fry sweet potatoes
7. Cover for 15 - 20 minutes(until potatoes are tender but not mushy)
8. Add sauteed veggies to fried potatoes cook for 3 -5 minutes until mixed well
9. Serve hot

Ingredients:
1 large or 2 medium sweet potatoes
Broccoli
Sweet Peppers
Red Onion
2 teaspoons olive oil - for sweet potatoes
1 1/2 tablespoons olive oil - for broccoli medley
1 teaspoon taco seasoning for sweet potatoes
2 teaspoons taco seasoning for broccoli medley
Homemade southwest/taco seasoning blend
**This makes enough for 2 different servings. You can use half for this recipe and save the rest for later.**
1 tbsp chili powder
1 1/2 tbsp ground cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
*sometimes I use Adobo seasoning instead of onion and garlic powder.
Feel free to add any type of dressing or salsa that you want to add more flavor!

HARVEST HASH WITH SWEET POTATOES AND HAM (HOSTING FOR THE HOLIDAY'S)
HARVEST HASH WITH SWEET POTATOES AND HAM
Serves 6
3 sweet potatoes
2 Tbs butter
1 yellow onion, chopped
5 cloves garlic, chopped
1 red pepper, chopped
Splashes of olive oil
1 ham steak, cubed, about 2-3 cups*
4 cups fresh spinach
Salt and pepper
Red pepper flakes
½ cup freshly grated parmesan
4 large eggs
Fresh thyme
Poke holes in the potatoes. Bake for 15 minutes on a sheet pan at 425F. Remove and let cool enough to handle. Peel and cut into 1” cubes. Set aside.
In a large cast iron skillet or braiser with a lid, saute onions, garlic, and pepper in butter until tender. Add sweet potatoes, pinch of salt and pepper, then cover with lid and let cook for about 10 minutes over medium heat until potatoes are tender. Stir occasionally. Remove lid, increase heat to medium high. Add ham cubes. Cook and stir over medium high heat til potatoes are tender and get some good seared places on them. Stir in red pepper flakes. Pile spinach around the top, cover with lids and turn heat to low to allow the heat to wilt the spinach. Set aside.
In a nonstick pan, fry four eggs leaving yolks runny. I use the basting method with coconut oil and butter.
To serve, stir the spinach into the potato hash. Spoon into shallow bowls. Top with parmesan, a fried egg, and fresh thyme leaves. Serve right away.
*On Cooking Today, we use Petit Jean Meat ham steaks.
