Hamantaschen Recipe

Serves: 20 Large Hamantaschen
Ingredients
⅔ cup oil
⅔ cup sugar
2 eggs
2 ¼-½ cups flour, more may be needed
1 teaspoon baking powder
Instructions
Preheat oven to 350F. Line a baking sheet with baking paper.
Whisk together the oil and sugar. Add in the eggs and whisk till combined.
Mix in the flour and baking powder using a spoon. The dough should easily come together into a ball. It may require more flour, but be sure you do not add too much. You want it slightly sticky to ensure the edges stay closed.
Lightly flour the surface you will be rolling the dough out on. Roll out the dough to ¼-½ an inch thickness.
Use the rim of a glass cup or round cookie cutter to cut rounds of the dough. Place onto the baking sheet then place two teaspoons of lemon curd in the center of the circle. Pinch together the top and then bottom two corners creating a triangular shape.
Bake for 15 minutes or until the tops become slightly golden.
Notes
I do not suggest that you refrigerate this dough. It takes seconds to put together making it simple to prepare right before you need it. It can sit out room temperature for a bit as well until you use it.
Lemon Curd Filling
Powdered sugar, for dusting
Easy Microwave Lemon Curd Filling
1 egg
2 egg yolks
¾ cup sugar
¼ cup lemon juice
2 tablespoons flour
For the Lemon Curd Filling:
In a microwave safe bowl whisk together all the ingredients.
Heat in the microwave for one minute. Remove and whisk.
Continue microwaving for another 2 ½ minutes removing every 30 seconds to whisk. Each microwave is different, but it will begin to thicken. Once it is thick enough to only slowly drip off the spoon, it is ready. It will also thicken more as it cools.
Triple Chocolate Hamantaschen

Ingredients

1 teaspoon vanilla extract
2 eggs
6 tablespoons cocoa powder
¼ teaspoon baking soda
¼ teaspoon salt
2 ½ cups flour, plus more if needed
½ cup finely chopped chocolate
1 cup of your favorite chocolate spread
Instructions
Preheat oven to 350˚F. Line a baking sheet with baking paper.
Whisk the oil, sugar and vanilla. Add in the eggs and whisk till combined.
Whisk in the cocoa powder, being sure to remove any lumps.
Add in the flour, salt and baking soda. Mix together using a spoon. The dough should easily come together into a ball. It may require more flour, but be sure you do not add too much. You want it slightly sticky to ensure the edges stay closed.
Lightly flour the surface you will be rolling the dough out on. Roll out the dough to ¼-½ an inch thickness. Sprinkle the finely chopped chocolate all over the dough. Roll the rolling pin over the dough once to push the chocolate into the dough.
Use the rim of a glass cup or round cookie cutter to cut rounds of the dough. Place onto the baking sheet then place two teaspoons of chocolate spread in the center of the circle. Pinch together the top and then bottom two corners creating a triangular shape.
Bake for about 15 minutes.

POPPYSEED HAMANTASCHEN... a Purim treat! A simple sugar dough with a poppyseed filling shaped as a triangle to represent the Jewish holiday villain’s hat. Make this today to celebrate over the next two days.

Poppyseed filling
Poppyseeds, ground if possible 1 cup (135g)
Honey 0.5 cup (155g)
Milk 0.5 cup (120g)
Lemon juice 0.5ea (5g)
Sugar 1 tablespoon (5g)
Salt 1/3 tsp (2g)
Vanilla extract 0.5 tsp (2g)
Bring to a boil all ingredients and simmer for about 5 minutes, it should thicken to the point where it leaves a trail as you drag the spatula through the pot.
Dough:
AP flour 2 cups (250g)
unsalted butter 0.5 cup (112g)
Sugar 0.5 cup (100g)
Eggs 1.5 each (75g)
Baking powder 3/4 tsp (3g)
Salt 1/2 tsp (2g)
Lemon zest 0.5 ea
Sugar dough
Cream the softened butter (leave it out at room temp several hours before) and sugar. Alternate adding the eggs and the dries (AP flour, baking powder, salt). Mix till combined, dont overmix otherwise the dough will be tight and chewy. Roll it out to a thickness of 0.5 centimeter (or 0.15 inch), say twice as a thick as a silver dollar. Cutout to the size as needed (here 4”in diameter). Folding is important to avoid the dough opening while baking. Fold the right side so it overlaps on the left and from the bottom alternate so that on one side it is folded under the left side, and then folded on top of the right side. The final picture should give you an idea. Pinch shut.
Bake 335F, 13-15mins.

Well first of all use my recipe (it’s the best), then move your dough often so it doesn’t stick as you roll (you don’t need flour!), then pinch pinch and more pinching to make the triangle shape and finally refrigerate before you bake! INGREDIENTS
* 2/3 cup butter
* 1/2 cup sugar
* 1 egg
* 1 tsp. vanilla
* 1 tsp. lemon zest
* 1 tsp. baking powder
* pinch salt
* 2 cups (+extra for rolling out dough) flour
Recipe
1. Preheat oven to 375 F and prepare a baking sheet with parchment paper.
2. Cream butter and sugar about 1 minute.
3. Add egg, vanilla and the zest of a half a lemon and mix for another minute.
4. In a separate bowl, combine baking powder, salt, and 2 cups of the flour.
5. Combine the dry and wet ingredients.
6. Gather dough into a flat disk, use extra flour on your hands to make sure the dough is not sticky. Cover in plastic wrap and refrigerate 30-45 minutes.
7. Sprinkle working surface with flour, and roll out dough to 1/8-inch thick.
8. Use a circle cookie cutter (about 2-3 inch. in size) to cut circles in the dough.
9. Lift each circle off the surface and place on baking sheet.
10. Drop about a tsp. of filling onto each circle.
11. Pinch the circle into a three cornered triangle. Use water on your fingertips if the dough isn’t sticking.
12. Bake for 10-15 minutes at 375 degrees, until the edges just start to brown.
