2 tb Cooking oil 2 lb Ground beef 1 md Chopped onion 1/4 t Garlic powder or Minced garlic clove 2 ts Salt 2 ts Pepper 10 oz Sliced mushrooms, drained 10 oz Cream of tomato soup 14 oz Cream corn 2 c Fresh chop suey vegetables 3 c Cooked noodles Paprika Heat oil in frying pan. Add next 5 ingredients. Saute until no trace of pink remains in meat. Turn off heat. Drain and discard fat. Add mushrooms, soup and corn to meat. Stir. Empty in 2 quart casserole. Spread chop suey vegetables over meat mixture. Prepare noodles as directed on package. Drain. Arrange over vegetables. Sprinkle with Paprika for colour. Cover. Fish Burger with Tartar Sauce
Fish Burger with Tartar Sauce, Homemade burger buns and pickled red onions. It's better than McDonald's.
Recipe: For the Buns: First you need to make tangzhong. Combine in a sauce pan 60g of whole milk, 30g of water and 20g of bread flour. Cook for around 1-2 mins until thick and pasty. Set aside to cool. Meanwhile, heat 120g of whole milk till it reaches 95F and add 7g of instant yeast and 2 tbsp of sugar. Let it sit for 5mins. In a stand mixer, combine 320g of bread flour and pinch of salt. On a low speed, add the milk-yeast mixture to the flour along with the tangzhong, 1 egg and 1 egg yolk. Increase to low to medium speed and mix until combined. Once incorporated, add 40g of softened butter in intervals and keep mixing until the dough is smooth. Form a ball with the dough and let it sit for 1.5 hours in warm place. Divide the dough into 100g balls and shape. Let it sit for 1.5hours. Brush with egg wash and bake at 375F for 15mins.
For the tartar: First you need mayo. Combine in bowl 1 egg yolk, 1 tbsp of mustard, 1 tbsp of white wine vinegar. While constantly mixing, add 150ml of grapeseed oil in small increments until you have mayo. Chop 2 anchovies fillets, 1/4 cup of chopped capers, chopped parsley, dill and chives. Season with lemon juice.
For the batter: Combine 1 cup of AP flour, 1 tbsp of baking powder. and 1/4 cup of beer. Add the beer in increments, you can always add beer if it's thick but if you add too much you can't remove it anymore. The consistency should be a bit thicker than tempura batter.
