5-6 eggs
bacon crumbles
1/4 cup diced onion, bell pepper, cherry tomatoes, mushrooms
bacon crumbles
cooked sausage
hashbrowns
Shredded cheese
Optional hot sauce
Chorizo Tacos:

small tortillas
1/2 cup cooked chorizo (per taco)
1 egg (per taco)
1/8 cup diced onion
1/4 cup mexican queso dip cheese
1/4 cup shredded monteray jack cheese
2 Tbsp salsa
1. Cook chorizo. Put in bowl.
2. In small skillet, use 1/2 cup chorizo, onion and egg (scramble the egg) and queso.
3. Put monteray jack cheese on tortilla.
4. Add egg/chorizo to tortilla, top with salsa/guacamole
Kale Sweet Potato Breakfast Bowl:

1 cup sweet potatoes diced
1-2 eggs
1-2 cups kale or spinach
optional 2 slices bacon crumbled
1/4 cup diced onion
1 green onion sliced
1/4 cup diced bell pepper
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp paprika
1. Drizzle 1 tbsp olive oil in small skillet. Add sweet potatoes, onions, peppers. Let cook for 2-3 minutes until softening.
2. Add in kale, bacon and seasonings. Cook until kale softens.
3. Add eggs on top, cook on top or stir in.

Sausage Quiche
Ingredients
• 1 9-inch unbaked deep dish frozen pie crust
• 8 oz mild or spicy breakfast sausage
• 5 green onions green onions thinly sliced
• 2 cups shredded sharp cheddar cheese divided
• 1 cup half and half
• 6 large eggs
• 1 tsp garlic salt
• 1/2 tsp freshly ground black pepper
• 1/2 tsp ground mustard
• few dashes hot sauce optional
Instructions
1. Preheat the oven to 350°F. Place pie shell on cookie sheet. Set aside.
2. In a non-stick skillet over medium high heat, cook the sausage
3. Add the green onion and cook for 1 minute longer. Drain excess fat from pan.
4. Spread 1/2 sausage mixture in pie shell and sprinkle with 1/2 cheese. Spread remaining sausage over cheese.
5. In a medium size mixing bowl whisk together the half and half, eggs, salt, pepper,and mustard. Add a few dashes hot sauce, if desired.
6. Pour evenly over sausage. Sprinkle with remaining cheese.
7. Place into oven and bake for 45-50 minutes or until the center is set when gently shaken. Check at 30 minutes and lay a piece of aluminum foil on top to prevent over browning if needed.
8. Allow to rest for 30 minutes. Serve warm.

Italian Garlic Bread Quiche
Ingredients:
cooking spray
6 cups garlic bread cubed
2 cans diced tomatoes, undrained, 28 ounces
1 1/2 cups skim milk
10 eggs
1/4 tsp black pepper
2 tsp Italian seasoning
1/4 c. diced onion
1/3 c. shredded cheddar cheese
1 c. shredded mozzarella cheese
1/2 c. pepperoni or 1 c. diced ham
Instructions: beat eggs with milk. Add black pepper, Italian seasonings to egg/milk mixture. Mix. Place garlic bread cubes in 9x13 baking dish sprayed with cooking spray. Pour egg mixture over bread. Spread tomatoes across. Sprinkle diced onion and cheeses across top. Press meat into half of the pan to make half vegetarian and half meat dish. Cook quiche at 400 degrees for 50 minutes. Cool 10 minutes. Cut and serve.
Spicy Comfort Food Baked Hash Brown Casserole
Ingredients:
24 ounces frozen hash browns, thawed
2 c. shredded sharp cheddar cheese
10 ounce can of tomatoes with chopped green chilies, undrained
2/3 c. Queso Fresco cheese, crumbled
4 ounce can of hot jalapenos
1/2 tsp salt
1/4 c. chopped onion
6 eggs
1 c. skim milk
1/4 tsp ground thyme
1 tsp coconut oil
1 1/2 c. ground mild Italian sausage, browned
Instructions: thaw hash bowns. Stir together thawed hash browns, cheeses, tomatoes with green chilies, jalapenos, onion. Mix well. Brown sausage. Grease 9x13 inch pan with coconut oil. Pat hash brown mixture into greased pan. Press down. Whisk eggs, milk, and thyme. Pour over potato mixture. Add browned sausage to half of the pan for combo meal of meatless and meat. Bake at 400 degrees for one hour. Cool 10 mintues. Cut and serve.

Basic Frittata-
9 large eggs
1/4 cup plus 2 tablespoons (90g) milk
1/4 cup (60g) heavy cream
1 teaspoon (3g) kosher salt
pepper to taste
1 sweet onion, julienned and sauteed all the way
1 red bell pepper, fire roasted and diced
1 cup (70g) grated cheddar
1/4 cup crumbled feta
Fancy Frittata-
9 large eggs
1/4 cup plus 2 tablespoons (90g) milk
1/4 cup (60g) heavy cream
1 teaspoon (3g) kosher salt
3 links merguez, seared and crumbled
1 bunch green onion, charred and cooked down
4 ounces goat cheese crumbled
3/4 cup grated (26g) pecorino
2 teaspoons fresh thyme leaves, finely chopped
1 bunch chives, finely sliced to top
Garlic Chantilly -
1/2 cup (120ml) heavy whipping cream
1-3 cloves garlic
salt to taste
Frittata Breakfast Sandwich-
1/3 cup (61g) mayo
2 tablespoons (32g) sriracha
2 tablespoons (26g) hot sauce
salt and pepper to taste
brioche buns, toasted (buy from central, makes sure they are primo) ****
sliced smoked cheddar
very thick cut bacon, cooked
HASHBROWN BREAKFAST CUPS: EASY BRUNCH IDEAS
I forgot to mention that I topped mine with some hot sauce. These are simple to make, kids can even help make these. Remember for regular sized muffin tins or if your oven runs hot, only cook hashbrowns for 25ish minutes, then depending on how you like your egg cooked, adjust the temperature to it. We like ours over medium, so about 12 minutes did the trick this time.
