Ingredients
Cake
¾ cup (175 ml) vegetable oil
3 large eggs
1 cup (200 g) packed light brown sugar
½ cup (100 g) granulated sugar
1 tsp (5 ml) vanilla extract
2 cup (300 g) all-purpose flour
2 tsp (6 g) baking powder
1 tsp (3 g) ground cinnamon
½ tsp (3 g) baking soda
½ tsp (3 g) salt
½ tsp (2 g) ground allspice
¼ tsp (1 g) ground cloves
2 cup (100 g) loosely packed, finely grated carrot (about 7 oz)
¾ cup (75 g) lightly toasted walnut pieces or raisins (optional)
Frosting
1 pkg (225 g) brick cream cheese, at room temperature
¼ cup (60 g) unsalted butter, at room temperature
3 cup (390 g) icing sugar, sifted
1 tsp (5 ml) vanilla extract
1 tsp (5 ml) lemon juice
lightly toasted walnut pieces, for garnish
Directions
Cake
1. For the cake, preheat the oven to 350 F (175 C). Grease two 9-inch round cake pans and line the bottoms of the pans with parchment paper.
2. Whisk the oil, eggs, brown sugar, granulated sugar and vanilla in a large bowl until blended.
3. In a separate bowl, sift the flour, baking powder, cinnamon, baking soda, salt, allspice and cloves. Stir in the grated carrot to coat it with the flour (this will help extract the most colour. Add this to the wet mixture and stir until evenly blended (the batter will be wet). Stir in the walnut pieces or raisins, if using. Divide this between the 2 pans and bake the cakes for 25 to 30 minutes, until a skewer inserted in the centre of the cake comes out clean. Cool the cake for 30 minutes in their pans, then turn out onto a cooling rack to cool completely.
Frosting
1. For the frosting, beat the cream cheese and butter until smooth. Add half of the icing sugar and beat until smooth. Beat in the vanilla and lemon juice and then beat in the remaining icing sugar until light and fluffy.
2. To assemble the cake, peel the parchment paper from the cake layers and place one layer onto a plate or platter. Spread the top with a generous layer of frosting and top with the second cake. Frosting the top and sides of the cakes and use your spatula to create swirls in the frosting. Sprinkle a few walnut pieces on the top of the cake as garnish, or press the walnut pieces onto the sides of the cake.
3. The cake will keep, refrigerated, for up to 3 days.

How to make Hawaiian Cake
This is a really easy and delicious recipe that you can make if you are in a hurry, and need a quick dessert. This dessert is very light, and i guarantee that you will love it.
Recipe from Taste of Home
Ingredients:
1 package yellow cake mix (regular size)
3 packages (3.4 ounces each) instant vanilla pudding mix
4 cups cold milk
1-1/2 teaspoons coconut extract
1 package (8 ounces) cream cheese, softened
1 can (20 ounces) crushed pineapple, well drained
2 cups heavy whipping cream, whipped and sweetened
2 cups flaked coconut, toasted
Directions:
Mix cake batter according to package directions. Pour into two greased pans. Bake at 350° for 15 minutes or until done. Cool completely.
In a large bowl, combine pudding mixes, milk and coconut extract; beat for 2 minutes. Add the cream cheese and beat well. Stir in pineapple.
Spread over the cooled cakes. Top with whipped cream; sprinkle with coconut. Chill for at least 2 hours.

Delicious Poke Cake from Viewer Helen
Here's Helen's comment and recipe from her mother: Jello was a daily event..especially in summer. I liked the gold sheet cake poked with holes and filled with strawberry Jello, spread with the ever present Cool Whip then refrigerated. I also remember Jello was a sponsor of the Jack Benny show There's always room for Jello! ???? Vegan now...no jello...but I may have gotten my fair share in the 60s.
Copied from my Mother’s recipe box. There are no times for chilling and I question beating the pudding mix for 8 minutes. Also don’t know if Dream Whip still exists. (Kevin's note: beating time is correct, and Dream Whip is still easily available.)
Ice Box Cake (KLJ note: I changed the title to Poke Cake)
1 box Duncan Hines Lemon Supreme cake
1 small box Lime or Strawberry Jello
1 small box instant vanilla pudding
1 pkg Dream Whip
Mix and bake cake in rectangular pan according to package.
When cool poke holes 1 inch apart all over cake with toothpick or skewer.
While cake cools, mix jello with ¾ c hot water then an additional ½ c cold water.
When jello and cake are cool, pour jello evenly over cake and refrigerate.
Topping
Chill bowl in freezer for ½ hour. Beat 1 pkg Dream Whip and 1 box vanilla pudding with 1 and ½ cups cold milk for 8 minutes. Spread on cake and put back in fridge to chill.

Pineapple Coconut Cream Cake
Pineapple Coconut Creme is a family favorite cake of ours; many friends who don't like coconut like it also! It is easy to make using a box yellow cake mix and a yummy filling with Cool Whip on top. Give this cake a chance! It gets even better after sitting in the refrigerator overnight.

Pineapple Coconut Crème Cake
Bake 1 yellow cake mix by box instructions.
Makes one 9 x13 size.
Let cool, split the layer.
Topping:
1- 15 oz. can crushed pineapple with juice
2 cups sugar
1 - 16 oz. sour cream
1 small bag of frozen coconut (6 oz.)
Mix topping together and put ½ of mixture between the split layer and the 2nd half on top of the cake. Then cover with Cool Whip!
It keeps in the refrigerator for a week. It continues to get moister as it soaks up the juices from the topping! P.S. You can also freeze it for future company!
