Recipe: Hearty Turkey Chili
January ~ the perfect month to cook healthy comfort food! This chilli is healthy and delicious and it may even have a few ingredients that surprise you! This recipe serves 4-6 but also doubles well! Make extras cause you’re gonna want seconds!

Recipe: Hearty Turkey Chili
* 1 pound Meridian ground turkey
* 1 tablespoon Meridian extra-virgin olive oil
* 2 cloves garlic finely chopped
* 1 small onions diced
* 1 green peppers chopped
* 1 stalks celery diced
* 2 cups yams peeled and cubed (optional but it gives the chili great flavour and consistency)
* ½ cup chicken stock
* ½ can tomato paste (we love Itallisima from Bosa Foods
* 1 cup Meridian Tomato sauce
* 1 small can diced tomatoes in their juices (14.5 ounces) we love Itallisima diced tomatoes from Bosa Foods
* 1 can of red or white kidney beans
* 2 tablespoons chili powder
* 2 teaspoons ground cumin
* 2 teaspoons smoked paprika
* ½ teaspoon salt or to taste
* ½ teaspoon freshly ground black pepper
* Pinch red pepper flakes (optional - add more for spice)
* Heat the oil in a large pan or a large soup pot over medium heat. Add the garlic, onions, bell pepper, celery, and sweet potato. Sauté for approx 5 minutes, until soft.
* Add the ground turkey and cook until browned, 7-8 minutes, stirring often to break apart the turkey.
* Drain any excess liquid from the pan when turkey is cooked.
* Once the turkey is browned, add ½ cup chicken stock, tomato sauce, diced tomatoes, kidney beans, chili powder, cumin, smoked paprika, salt, black pepper, and red pepper flakes. Bring to a gentle boil, then reduce to a simmer.
* Let cook, uncovered, until the chili thickens, about 20 minutes, stirring every so often so that the chili does not stick to the bottom. If the chili becomes too thick, add a little chicken stock to reach your desired consistency.
* Remove from stove and add toppings!! Serve with tortilla chips. We recommend locally made Fresh Is Best chips! For toppings we recommend;
*sliced avocado
*sour cream
*shredded cheese (we love Paradise Island shredded cheese blends!
*sliced jalapeño
*chopped cilantro
*chopped green onion

Old video. What to do with leftover turkey from Thanksgiving. I get tired every year of reheated turkey so tried doing other things with it. This was delightful.
* 2 cups uncooked elbow macaroni
* 2 cups cubed cooked turkey breast
* 2 cups 2% milk
* 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
* 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
* 1 can (8 ounces) sliced water chestnuts, drained
* 1/2 pound Velveeta, cubed (if your country doesn't have Velveeta, try something like cheddar)
* 3 hard-cooked eggs, chopped
* 1 jar (2 ounces) diced pimientos, drained
* 1 teaspoon grated onion
Cook macaroni according to package directions; drain and place in a large bowl. Add the remaining ingredients.
Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until bubbly.

Hello my Friends!!
Hope everyone had a wonderful Thanksgiving!! Do you still have turkey leftover from the big feast? We are going to turn it into a delicious and hearty meal, Turkey Bolognese!! A yummy and the Bomb dot com Pasta dish that is full of Turkey Goodness!! This will be a hit every year from your leftover Turkey!! Also check out my Slideshow of the Foods I made on Thanksgiving.

Lemon Turkey Soup:
Italian Stuffed Meatloaf (Stuffed with Dressing/Stuffing):
1/4 cup extra virgin olive oil
1 onion, diced
2 large cloves garlic, minced
1 celery stalk, chopped
1 carrot, peeled and chopped
1 pound turkey, shredded (white, dark, or combination)
1 (24 oz) jar pasta sauce
Salt, black pepper, and Italian seasoning, to taste (or any seasoning)
1/4 cup freshly chopped basil
Parmesan Cheese
1 pound spaghetti (or pasta of your choice)
In a large pot of boiling salted water, add pasta and cook until al dente. Drain.
In a large pot on medium heat, add olive oil. Add in onion, garlic and a little salt; cook until translucent (about 5 minutes). Then add celery and carrot, cook for another 5 minutes (until translucent). Next add the turkey to the vegetables and sauté for 1 minute. Then add pasta sauce and seasonings to taste. Cook sauce for 15 minutes until it is thick. Add pasta to the sauce and add basil and parmesan cheese. Stir until well combined and Enjoy.
