How To make Herbal Bean Sausages
2 c Cooked pinto beans
1/2 c Whole wheat breadcrumbs
1/2 c Onion, minced
1 Garlic clove; minced
1/2 c Tomato sauce
1/8 ts Fennel seed, crushed
1/8 ts Dried red pepper
1/8 ts Dried basil; -OR-
1/2 ts -Fresh basil
1 1/2 ts Chopped fresh parsley
Salt; to taste -------------------------MUSHROOM-RED PEPPER SAUCE------------------------- 1 Red bell pepper; minced
1/8 c Vegetable broth or water
-OR- more as needed 4 lg Mushrooms; minced
1/4 c Onion; minced
Salt; to taste 1/8 ts Celery seed
1/2 ts Chopped fresh oregano
1 ds Black pepper
Whole wheat flour -- (pastry flour works best) These plant-based sausages taste great, contain no added fat except the vegetable oil they're fried in, and are easy to make. These ingredients yield fairly mild sausages; after you've tried them, adjust the seasonings to please your palate. DIRECTIONS: =========== Combine all ingredients in a mixing bowl, mix thoroughly, and shape into 1- to 2-inch sausages. Saute in a small amount of vegetable oil until crisp, or place in a baking pan and broil, turning when edges are slightly crisp. Serve with Mushroom-Red Pepper Sauce (below). MUSHROOM-RED PEPPER SAUCE: Cook red pepper in vegetable broth for 5 to 7 minutes until tender. Add mushrooms, onion, salt, celery seed, oregano, and black pepper. Cook 5 minutes longer or until onion is transparent. Quickly whisk in enough flour to just thicken the sauce, about 2 tablespoons at a time. Immediately remove from burner. Do not overcook, or flour will cake. If needed, add more vegetable broth or water. Being a vegan its not an overnight thing it requires commitment , learning cooking skills, patience and endurance especially when you don't have your own home.
For the past years since i became a vegetarian in 2011 i have come to learn alot that i have decided to share today.
I have come to learn from different people. Personally including friends around me we like eating good, sometimes you will find us like eating the same foods because we are too busy, run out of options sometimes ???????????? because we are humans too and we're not yet married yet so that part is missing ????????????
Okay lets run to what i have for you
Ingredients for my vegan sausages
Called i love you dish
Ingredients
125g or 90g of boiled soya pieces.
1 onion, peeled (I've used a mix)
3-5 cloves garlic and ginger, peeled
1 cup wheat/rice/soya flour(3tbs or more depending on the amount of pund soya pieces
1 tbsp curry powder
1tbsp Chili or cumin powder
1 tsp paprika
salt and pepper
Instructions
Place the onions and garlic into the food processor bowl and process until finely chopped.
Add the drained soya pieces(you can use soya beans if you like) , herbs, flour, salt, pepper, and ginger. Process the mixture until well-combined. Aim for the mixture to look roughly like sausage meat. You can leave some lumps if you like, but don't over-process, as the mixture will become mushy and too sticky to properly shape. Scrape the mixture down from the sides of the bowl to get a good mix. As the water content of soya chunks(soybeans) can vary, you may need to add some more flour if the mix is too wet. If the mixture is dry and crumbly, add a little of the reserved chunk(bean) water.
Cut a piece of clingfilm roughly 15cm wide and lay it out on a flat surface. Place a heaped tbsp of the sausage mixture on to the clingfilm and shape it into a rough sausage shape. Hold the clingfilm edge nearest to you and wrap it over the sausage, rolling it towards you if needed. Now roll the sausage in the clingfilm quite tightly. You can determine the thickness and length of the sausage by how you roll it now.
Twist the extra clingfilm at one end and tie a knot against the end of the sausage. Repeat this with the opposite end of the sausage. As you twist, you will feel the sausage mixture firm up.
Repeat steps 3 and 4 with the remaining vegan sausage mixture.
The finished sausages should now be chilled for at least 30 minutes to firm them. After this time remove the clingfilm and your vegan sausages are ready to use. They can also be frozen and cooked from frozen. If you wish, you can freeze the sausages while they are still wrapped inside the cling film. This can then be easily peeled off before cooking.
The sausages can be ]]grilled, oven-baked or fried. I have also seen similar recipes that are steamed, but I have not tried that cooking method with these sausages myself.

Sausage and Herb Stuffing

Ingredients
16 cups 1-inch bread cubes, white or sourdough (1 1/2 pound loaf)
8 tablespoons (1 stick) unsalted butter
2 cups medium-diced yellow onion (2 onions)
1 cup medium-diced celery (2 stalks)
2 Granny Smith apples, unpeeled, cored and large-diced
2 tablespoons chopped flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
3/4 pound sweet or spicy Italian sausage, casings removed
1 cup chicken stock
1 cup dried cranberries
Directions
Preheat the oven to 300 degrees F.
Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.
Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.
In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.
Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 by 12-inch baking dish. Bake for 30 minutes, until browned on top and hot in the middle. Serve warm.

6 Slimming World Syn free sausages (cooked) available from Iceland
low calorie cooking spray
1 large onion
2 medium courgettes
1 yellow pepper
350g pot of Slimming World chunky tomato sauce (cooked) available from Iceland
400g can mixed beans
1 tsp dried oregano
200ml chicken stock
Start off by cooking the sausages.
As the sausages cook, mist a large pan with low-calorie cooking spray and stir fry the onion, courgette and pepper for a few minutes.
Add in the herbs, beans and Slimming World's chunky tomato sauce. Stir in the rest of the ingredients and add the cooked sausages. Simmer for a few minutes until everything is cooked and serve straightaway.
