2 ¼ cups Granulated Sugar (517.5g)
6 Eggs
1 ½ tablespoons Brandy, for the batter
2 tablespoons Honey, for brushing cake
1 cup Brandy, for soaking, optional (224g)
½ Apple, peeled & sliced, for storing, optional

1 cup (16TBsp) 225g butter
2TBsp (45g) honey
2/3 cup (100g) brown sugar
zest of lemon
zest of orange
vanilla
spices
1tsp baking powder
1 2/3 cup (230g) flour
3 eggs
3/4 cup (100g) any nuts
3 cups (560g) dry fruits

Easy fruit loaf cake recipe. Easy Baking
Surprise your loved ones with this easy and delicious fruit loaf cake! Everybody will ask for more.
This fruit loaf cake recipe will quickly become your favourite! So fruity and flavourful, it will be very hard to resist another slice.
RECIPE:
Prep time: 15 minutes
Baking time: 1 hour 15 minutes
Total: 1 hour 30 minutes
125g (1/2 cup) room temperature unsalted butter
125g (3/4 cup) sugar
3 eggs
1 heaping tbsp jam (any flavour)
60ml (1/4 cup) milk
250g (1+1/2 cup) plain flour
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground coriander
1 tbsp baking powder
Pinch pf salt (1/8 tsp)
400g (2 cups) dried fruit cake mix (you can add less, for example 300g (1+1/2 cup) if you wish.
Bake in a preheated oven at 170C / 345F / Gas mark 3.
Baking time: 1 hour 15 minutes, or until toothpick comes out clean.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 1 hour and 10 minutes of baking.
