MAKES: 1 cocktail
INGREDIENTS:
For the cocktail:
1 1/2 ounces Patrón Silver Tequila
1 ounce fresh Granny Smith apple juice
3/4 ounce freshly squeezed lemon juice
1/2 ounce acacia honey syrup (see below)
Celery salt, for rim (see below)
Apple fan, for garnish
For the acacia honey syrup and celery salt:
2 parts acacia honey
1 part filtered water
2 parts kosher salt
1 part celery salt

Manuka Honey Nighttime Ritual Tea Recipe
For the perfect, relaxing end to your day, try this nighttime ritual tea. Made with your favorite caffeine-free tea, Manuka Honey, and apple cider vinegar.
Ingredients:
Favorite herbal, non-caffeinated tea
1 tablespoon of apple cider vinegar
2 tablespoons of Comvita® Certified UMF® 5+ Manuka Honey
1 cup of hot water
Directions:
Combine all ingredients into a mug while water is boiling.
Add hot water.
Relax, meditate, and get settled in for the night.

Vegan Honey?! | Made from Apples, Sugar and Lemon
Make your own bee-free honey from this recipe of apples, lemons and water! It really tastes like honey! This vegan alternative goes great in tea and coffee, makes a nice sweetener for smoothies, and a yummy topping for pancakes and waffles.

This recipe uses 8 apples because it was what I happened to have on hand on the day I came up with the recipe. You can simply multipy or divide the amounts to make larger or smaller batches.

A NOTE ABOUT SUGAR: Hey guys, a few of you have been asking so here's the low down. Some white sugar is filtered through bone char during the purifying process. This is true of most white cane sugar and often brown/golden sugar as well. Other white sugars aren't typically filtered this way, such as beet sugar. The ONLY way to determine for sure if any brand of sugar is vegan-friendly or not is to contact the manufacturer directly to ask specifically about bone char (if not labelled as vegan). Fun fact: Sugar made in Australia is all bone-char free!
For those in Western Canada, Roger's sugar coming out of Taber, AB doesn't use bone-char either. The product number will start with 22 if it's from Taber. If it starts with 10, it's from Vancouver, BC where it is NOT vegan-friendly.

VEGAN HONEY / AKA APPLE SYRUP
Makes 1 cup
INGREDIENTS (US)
8 medium sized apples (Or, shortcut method, use 2 cups of 100% pure pressed apple juice)
1 cup water (not used if using juice shortcut method)
1 cup sugar
1 tsp lemon juice
INGREDIENTS (METRIC)
8 medium sized apples- about 1440g (Or, shortcut method, use 474ml of pressed apple juice)
237 ml water (not used if using juice shortcut method)
200 g granulated sugar
5 ml lemon juice
To make apple juice, using blender/strainer method (skip to Turning Juice into Syrup if using the shortcut):
Cut apples into 2 chunks and remove seeds. I found there was no need to peel the apples; the natural pectin in the peel helps to thicken the syrup
Blend apple pieces with 1 cup water until pureed. It does not need to be smooth; too smooth will make it harder to separate the juice form the pulp.
Using a strainer, nut milk bag, or cheesecloth, separate the pulp from the juice. I used a cheesecloth draped over a pitcher and secured with an elastic band. Then, I poured the apple puree into the cloth, a little at a time, using a spoon to press all the juice out. You may have to do it in batches if you do it this way, taking away the dry pulp and adding more wet pulp. You'll have an easier time with a nut milk bag. You should have about 2 cups worth of juice at the end.
Turning Juice into Syrup:
In a pot, combine the apple juice, lemon juice and sugar. Bring to a rolling boil on high heat, then immediately turn down to medium heat. Don't let it boil over!
Let simmer until liquid is reduced to about half (about 1 cup's worth) or to desired thickness. To test the thickness, chill a spoon in the freezer, then dip it quickly in the syrup. When the syrup on your spoon has cooled, you can touch/taste it for consistency. This may take 20 minutes or more. Keep your eye on this so it doesn't boil over! Safety first, kids!
Pour into a heat-safe container and let cool before covering.

❤ HOW TO MAKE IT:
1.First, you want to get yourself a chunk of fresh ginger.wash ginger thoroughly and peel it. I have used 1 inch of ginger root for this herbal tea recipe. Next chop ginger into 8 to 10 thin slices. It doesn't have to be precise, but you want plenty of surface area to steep and as much of the nice juices released as possible. Drop slices of ginger in the mug/ bowl, and pour the rolling boiled /recently boiled water on top. The hotter the water is, the more nice gingery-ness you will have in your tea.
2. If you're adding cinnamon stick, nutmeg, spices, actual tea, etc., add them to the bowl when you put in the ginger. Once you've added the water, let it sit for a few minutes, and you should get a lovely pale gold colored slightly cloudy tea. At this point, you can strain out the bits of ginger if you like, but I generally prefer to leave them in. (As long as you've peeled the ginger, everything should sit on the bottom of the mug so you can drink it without too much trouble.) Be aware though that it will continue to get stronger for quite a while as it sits with the bits of ginger.
3. Now add lemon juice and stir it well. Drink herbal tea warm for maximum health benefits and to fight flu, cold & cough ! Enjoy :)
