2 c Water 1/2 c Honey 4 Sprigs fresh mint 1 c Fresh lemon juice Sugar Ice COMBINE WATER AND HONEY in saucepan and bring to boil over high heat. Remove from heat. Add mint and let cool. Pour liquid through strainer into pitcher and discard mint. Add lemon juice. Taste and add sugar to desired sweetness. Chill. To serve, fill glasses with ice and pour in lemonade. Makes 1 Quart

Mint Honey
Mint honey yields 4-6 cups 5-6 cups fresh mint leaves, chopped 48 ounces honey Place the mint leaves in a glass jar. Pour the honey over the leaves, poking the leaves into the honey to ensure that all the leaves are covered with honey. Allow mixture to sit overnight or even up to three nights, covered with a lid. Strain the leaves from the honey into a clean jar. Press the leaves to release every bit of the honey. No essential oil is needed for this fragrant honey. Cap the jar and store them in a cabinet. Stir it into hot teas or into oatmeal, granola, lemon aid, etc. NOTE: I cut the recipe in half for the video.
