Good, Healthy soup recipe! November 2015
This soup can be your damage control when you've eaten too much of the holiday goodies. Even if you aren't dieting or trying to watch what you eat, it's a lovely soup to make for a cold, winter's day (or night!).
1 Tbsp olive oil (to saute with)
4 slices bacon, chopped
1/4 C. onion, chopped
1 Tbs. garlic, minced
1/4 C. sun dried tomatoes, chopped
1/2 C. mushrooms, sliced or chopped
8 C. chicken stock
2 C. water
2 C. celery root, peeled and cubed
4 C. cooked chicken breast, chopped
2 C. yellow squash, sliced and quartered
1 C. green beans, cut into 1 pieces
4 C. Swiss Chard, chopped
2 Tbs. red wine vinegar
Sale and pepper to taste
First, saute bacon in olive oil for about 2-4 minutes over medium heat. Then, add onion, tomatoes, garlic, and mushrooms and further saute for about 5 more minutes. (Cook until all veges are tender.) Add to stock pot which contains chicken broth and water. Add celery root and chicken. Simmer / low boil for 15 minutes. Add squash, beans, and Swiss chard. Simmer another 10 minutes until additional veges are tender. Add red wine vinegar and season with salt and pepper to taste. Makes (9) 2-cup servings

Texas Cowboy Stew
Ingredients
2 lb ground beef
2 packages kielbasa sausage sliced into ½ inch pieces
2 garlic cloves, minced
1 onion, chopped
2 (14.5oz) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15oz) cans pinto beans, with liquid
1 (15.2oz) can whole kernel corn, Drained
2 (14.5oz) can diced tomatoes with green chile pepper, with liquid
1 (10oz) package frozen mixed vegetables
4 cups of water -- (I used beef broth)
2 tsp ground cumin
2 tsp chili powder
Salt and pepper to taste
Instructions
In a dutch oven over medium heat, sauteé onion. Add ground beef and cook until there’s no pink left
Add sliced sausage
Pour in tomatoes, pinto beans, corn, potatoes, diced tomatoes with chiles and veggies
Mix everything until well combined, add spices
Add water, bring to a boil, and simmer for one hour

I picked Chef Cupboard Creamy Potstoe soup as part of the $25 Prepper Pantry Stock-up Challenge. I have been craving potato soup for a while. To be honest I’m not an instant powder soup type of person. So I wasn’t sure what to expect. This is probably some of the best soup I’ve had. I didn’t add any Salt or pepper to it. It has the right amount of spice to me, is thick and creamy. It’s a winner for sure.

Soy protein demystified: How to properly cook it and make it taste amazing and without any soy trace taste. This recipe is perfect to be served over a bowl of rice or use it to substitute meats in meat dishes such as lasagnas, bolognese sauce, meatballs, etc. Rule number one for the perfect soy dish: Do not rehydrate it!

INGREDIENTS:
1 1/2 cups of soy protein (TVP, TSP)
a drizzle of oil
half onion, minced
1 carrot, minced
2 garlic cloves, minced or 1 teaspoon of garlic powder
1 bay leaf
juice of one small lemon or lime
1 cup of tomato juice or blended fresh tomatoes
2 tablespoons of soy sauce
1 teaspoon of vegetable bouillon
a pinch of black pepper
water if needed
METHOD:
add the tomato juice, the vegetable bouillon, and the soy sauce to a jar and stir until combined
add the oil to a skillet
add the onions, carrots, the Brazilian spice blend and bay leaf (and the minced garlic if you're using fresh garlic)
saute for 2 minutes on medium heat
add the soy protein
stir for 1 minute then add the tomato juice mixture, stir until almost dry
add the garlic powder, the black pepper, stir until combined
add the remainder of the tomato juice mix and stir until the soy protein is soft.
Serve it over a bowl of rice or use it to substitute meats in meat dishes such as lasagnas, bolognese, meatballs, etc.
BRAZILIAN SEASONING SPICE BLEND
INGREDIENTS:
A bunch of parsley
A bunch of spring onions
1 bay leaf
1 sprig of rosemary or 1 tablespoon if dry
1 teaspoon of black pepper
1 large yellow onion
10-12 cloves of garlic, peeled
A piece of red bell pepper
1 tablespoon of cumin
1 teaspoon of paprika
1 tablespoon of oregano
1 teaspoon dried sage or sage leaves
1 tablespoon of dried or fresh thyme
1 tablespoon of salt
1/3 cup (approx.)of olive oil
1 chili pepper, deseeded - optional
METHOD:
Roughly cut the onions and the red bell pepper into chunks,
add the onions, garlic, red bell pepper, bay leaf, and rosemary to the food processor and pulse it for 4, 5 times, scraping the sides if necessary
Add the remainder of the ingredients and pulse it 5 or 6 times more, until all combined. This blend is not supposed to become a smooth paste but a chunky one, if the blend is too smooth, it will kill the aromas and flavors
Complete the jar with olive oil (OPTIONAL BUT PRESERVES THE SPICES BETTER)
Add the blended ingredients to a clean, sterilized and dry glass jar and put in your fridge, it will be good for up to 3 months
If you want to freeze it, do not add salt

Chili Recipe - How to Make Homemade Chili - Easy Delicious One Pot Meal - The Hillbilly Kitchen
Nothing beats a bowl of hot chili served up with salty crackers and a cold glass of milk on a blustery winter's day. Kids love it with sour cream, cheese and tortilla chips.
My chili has a spicy flavor because of the peppers and onions, but it also has a slightly sweet taste that you and your family will love.
I won't lie and say that this recipe was handed down to me by my mom or granny. It's the result of 45 years of trial and error. That's what cooking is...trial and error.
When it comes to cooking, don't be afraid to go in the kitchen and throw some things in a pot and experiment, it's your kitchen.

Ingredients:
1 1/2 lbs.- ground beef
1 Onion
1 Bell pepper
2 Jalapeño Peppers
3 cans Beans - Kidney, Pinto, Black ....
1 or 2 cans tomato of your choice (can or fresh)
chili powder
salt & pepper
1 to 2 teaspoons sugar
1 tablespoon Vinegar
