Spicy Korean Braised Pork Short Ribs l Dwaeji Galbijjim by Chef Jia Choi
If you like Korean beef short ribs, known as galbijjim, you’ll definitely love this dish! Most ingredients are cut into chunks and cooked at different times throughout the braise-this allows each individual ingredients to taste at optimal. Pork ribs are slowly braised in a savory broth, flavored with Korean spices. It takes some time to cook, but the process is surprisingly simple. To ensure the success of this dish, high quality pork ribs is essential!

Spicy Korean Braised Pork Short Ribs / Dwaeji Galbijjim
Ingredients
1.3 kg pork ribs
1 large onion
1 potato
1 carrot
1 stalk green onion
Water to blanch pork bones
1 liter water
1/2 cup rice wine (or white dry wine)
Aromatic pouch
8 cloves garlic
3cm ginger
10cm green onion, or leek
1 tablespoon peppercorn
Sauce
100cc soy sauce
2 tablespoons cane sugar (or brown sugar)
2 tablespoons gochugaru (Korean chili flakes)
3 tablespoons gochujang
2 cloves garlic
Instructions
1. Prepare pork ribs cut into big chunks. Soak pork ribs in cold water for an hour. Then drain it.
2. Bring water to a boil. Add rice wine and pork ribs in a boiling hot water. Cook it for 3 minutes. Pull out from hot water and rinse in cold water. Drain.
3. Make an aromatic pouch by adding garlic, ginger, green onion and black peppercorns in it. Place it in a pot with pork ribs. Pour water to submerge the pork ribs. Bring to a boil.
4. Skim off. Then lower the heat. Cover the pot with a lid and simmer for 40 minutes.
5. Make a sauce. Mince garlic. In a bowl, add minced garlic, cane sugar, gochugaru, gochujang and soy sauce. Mix and set aside for about 15 minutes.
6. Cut onion, carrot, potato in big bite size pieces. Split leek lengthwise and then cut it in about 1 inch or so.
7. Add onion, carrot, potato, and sauce to the pot. Mix. Higher the heat to medium and cook with a lid on until the vegetables are all fully cooked.
8. When vegetables are cooked, add greed onion and higher the heat to thicken the sauce.
9. Turn off the heat. Serve it hot.

EASY Oven Baked Beef Short Ribs | The PERFECT Indoor BBQ Beef Ribs

I get it, some of you are skeptical. BBQ can't be done in the house... it has to be on a smoker, grill, or not at all! yeah I heard you. Trust me on this one, these BBQ beef ribs that I make in the oven are delicious and take VERY little prep!
I start off by wiping off the beef plate short ribs with a paper towel, then I score the back side (bone side) with a knife. This helps with the pull back as they cook. Then I use some olive oil as a binder and put a light shiny coat on all side. Now its time to season them. I like to use a salt and pepper based rub at a minimum or at least a starting point, and that EXACTLY what I did with my homemade rub:
2 TBSP Coarse Black Pepper
1 TBSP Salt
1 TBSP Lawry's Seasoned Salt. ( )
1 TBSP Granulated Garlic
1 tsp Granulated Onion
1 tsp Paprika
1.5 tsp Brown Sugar
But no worries if you aren't interested in making your own... here are a couple rubs that I suggest for Beef Ribs:

I season all side and place them in the preheated oven set at 300F.
Now this is the CRITICAL part! Beef ribs vary in thickness quite a bit, therefore the times will also vary. I set my timer to 2HR 15Min to start and at that point I begin checking for tenderness with a toothpick. I will continue to add more time to the timer until I get VERY little resistance with the toothpick. For me and these oven beef ribs, it took 3hr 15min for me to be happy with the tenderness.
Now I turned the oven to 425F and added sauce to my ribs. I used the Hey Grill Hey Everything BBQ Sauce ( ).
Once the oven was up to 425F I returned the beef short-ribs to the oven for 5-6 minutes to caramelize the sauce!
Remove the ribs from the oven and let them rest covered for 25-30min then enjoy!

Ingredients -
1 Tbsp (20ml) - Peanut Oil
1.2kg (2.6lbs) - Beef Short Ribs
2 Tbsp (60g) - Red Miso Paste
90ml (90g) - Soy Sauce
130ml (130g) - Mirin (See Notes Below)
2 Litres (8 Cups) - Chicken Stock
8 - Spring Onions (Scallions), Thinly Sliced
15g (0.5oz) - Ginger, Freshly Peeled & Julienned
1 Tbsp (20ml) - Rice Wine Vinegar (See Notes Below)
2 - Baby Bok Choy, Leaves Picked & Washed
270g (9.5oz) - Soba Noodles
Recipe Notes -
Both mirin and rice wine vinegar contain alcohol. The mirin can be substituted with 110ml (110g) of water & 10g (0.3oz) white sugar. The rice wine vinegar can be substituted with regular white vinegar.
Red miso paste is easy to get hold of and will be in the Asian section of your local supermarket.
To store, place in the fridge for up to 5 days and in the freezer for up to 6 months, both stored in an airtight container. If stored, it’s recommended to keep the beef short ribs and broth separate and store them in separate containers.
To reheat, place the broth and beef short ribs into a pot over medium-high heat, bring to a boil, reduce heat to medium and simmer for 10-12 minutes or until both the broth and meat is hot throughout.
