1 Spaghetti squash
The flesh of spaghetti squash, when cooked, comes out like strands of cooked spaghetti and makes a great light stand-in for pasta lovers. Prepare squash by cutting in half lengthwise and removing seeds. Pierce skin several times with a fork and follow one of the cooking methods below. To bake, prepare squash, and place, cut side down, in a large baking pan. Bake at 350 oF for 45 minutes or until skin is tender and strands may be loosened easily with a fork. To microwave, prepare squash, and place, cut side down, in a baking dish. Add 1/4 cup water; cover with plastic wrap, folding back a small edge of wrap to allow steam to escape. Cook on HIGH 7 to 10 minutes. To boil, prepare squash, and place, cut side down, in a Dutch oven, add water to a depth of 2 inches. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until tender. Drain. Cool cooked squash. Using a fork, remove spaghetti-like strands of pulp. Discard shell. Yield: 1 medium spaghetti squash equals about 4 cups cooked. June, 94 issue of Southern Living. 3 Simple Ways To Make Spaghetti Squash - Tasty Recipe
RECIPE:
First for the spaghetti squash, poke 15 holes in the squash. Microwave 4 minutes per pound, flipping over halfway through. Now that you've got your spaghetti base.
RECIPES FOR SAUCES:
Veggie Sauce-
1/2 cup chopped zucchini
1/2 tomato, chopped
1/4 cup onion, chopped
1/2 tsp salt
1/4 tsp pepper
1 Tbsp. olive oil
2 cups cooked spaghetti squash, hot
Microwave all ingredients together for 4 minutes. Add spaghetti squash. Top with parmesan.
Alfredo-
1/2 Tbsp. butter
2 Tbsp. whole milk
1/4 cup shredded parmesan
2 cups cooked spaghetti squash, hot
Combine all ingredients with warm spaghetti squash. Top with a sprinkle of additional parmesan.
Pesto-
2 Tbsp. pesto
1 Tbsp. olive oil
2 cups cooked spaghetti squash, hot
Combine all ingredients, and top with shredded mozzarella.
Spaghetti Squash: The RIGHT Way to Cut & Roast It
Cutting and roasting spaghetti squash: I've been doing it wrong for years... maybe you have, too?
1. Cutting: If you're after long, spaghetti-like strands in your roasted spaghetti squash, you should cut it crosswise as opposed to lengthwise — it's counterintuitive.
2. Roasting: If you want strands that don't turn to mush, you need to roast the squash for less time. When you remove the squash from the oven, it won't be knife tender or easily pricked with a fork. This will make it a little hard to tell if it's done, so you'll have to trust the method: 45 minutes at 350ºF is about right. Let it cool for 10 minutes; then gently pull with a fork.
I like this method because if you want to dress the spaghetti squash with another warm dressing, the firmer textured strands will be able to stand up to the warmth and weight of whatever dressing you use. Here I've tossed it with the baked feta and tomatoes... so good. Interestingly, I like it even more after it cools to room temperature.
