How To make Impossible Mexican Fiesta Casserole
1 lb Lean Ground Beef 2 c Bisquick Baking Mix
Salt & Pepper; To Taste 1/2 c Water 4 oz Cheddar Cheese; Shredded,1 C Tomatoes; Thinly Sliced, *
1 c Dairy Sour Cream 3/4 c Green Bell Pepper; Chopped
2/3 c Mayonnaise Or Salad Dressing Paprika; Optional
2 tb Onion; Finely Chopped
* Use 2 or 3 ripe tomatoes or to taste. Heat the oven to 375 degrees F. Cook and stir the meat in a large skillet until brown. Drain off the excess fat. Season the meat with the salt and pepper, then set aside. Mix the cheese, sour cream, mayonnaise and onion and set this mixture aside. Stir the baking mix and water together until a soft dough forms. With floured fingers, pat the dough in a greased baking pan, 13 X 9 X 2-inches, pressing the dough 1/2 inch up the sides of the pan. Layer the meat, tomato slices, and green pepper onto the dough. Spoon the sour cream mixture over the top and sprinkle with the paprika, if used. Bake uncovered until the edges of the dough are light brown, 25 to 30 minutes. Ingredients:
✅ For the salsa: this salsa is ???? if you don’t like hot I suggest you to use 5-10 Chile japonés these are similar to arbol yet less spicy and 1 jalapeño
2 roma tomatoes
Handful of Chile arbol
3 pickled jalapeños
1 tbsp jalapeño juice
1 garlic clove
Salt to taste
For the pico
3 roma tomatoes
1/2 onion
5-10 jalapeños
1/2 cup chopped cilantro
Pickled jalapeño juice
The juice of 1/2 lemon
Salt and black pepper to taste
For the meat
2 lbs ground beef ( I used 85/15)
1/2 onion
1 small bell pepper
1 roma Tomato
1 tbsp chili powder
2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp ground cumin
1 tsp paprika
1 tsp cayenne pepper
1 tsp oregano
1 tsp black pepper
Salt to taste I used 1 1/2 tsp
For the tostadas
Uncooked flour tortillas
Oil for frying
Lettuce

36oz Garlic & Herb Pasta Sauce (use a high quality sauce)
16oz spaghetti
1lb ground beef
1lb mild Italian sausage
white onion
bell pepper
garlic cloves
green onions
salt
pepper
8oz sour cream
5oz cottage cheese
4oz cream cheese (room temperature)
grated parmesan cheese
16oz mozzarella cheese
dried parsley (garnish)
STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
