Cheesy Taco Pasta Bake

Cheesy Taco Pasta Bake | Serves 5
????INGREDIENTS????
Taco Pasta Bake:
1lb / 500g Ground Beef (10-12%)
10.5oz / 300g Conchiglie (or other short cut pasta)
1 cup / 250ml Low Sodium Beef Stock
1x 14oz / 400g can of Chopped Tomatoes
1 cup / 100g Cheese (see notes)
1/2 cup Crushed Tortilla Chips or Hard Taco Shells, or as needed (see notes)
3 tbsp Taco Seasoning
1/2 medium Onion, finely diced
1/4 cup Pickled Jalapeños, finely diced (optional)
1 heaped tbsp Tomato Puree (Tomato Paste in US)
Olive Oil, for frying
Oil Spray, to top
Toppings:
Sour Cream, to drizzle
Red Onion, finely diced
Tomato, finely diced
Avocado, diced
Lime, to serve
????METHOD????
Add a drizzle of oil to a large pan over medium heat and add onion (and jalapeños if using). Fry until they begin to soften & brown, then add beef. Break up with a wooden spoon and continue frying until nicely browned and fully cooked through.
Add in taco seasoning then stir in 1 heaped tbsp tomato puree. Fry for a few mins, then pour in 1cup/250ml beef stock and 1 can of chopped tomatoes. Deglaze the pan as necessary, give it all a good stir and allow to simmer on low-medium for 10-15mins until the sauce begins to thicken and the tomatoes have burst.
Meanwhile pop 10.5oz/300g pasta in salted boiling water and cook until JUST al dente (if it's properly cooked it'll turn soft and sloppy in the oven, you want it still a little hard). Just before draining scoop out a cup of the starchy pasta water. Pre heat oven to 200C/390F.
Combine pasta and beef with 1/3cup of starchy pasta water. Give it a good stir until everything is blended. The starchy water will help create a sauce, with the starch molecules emulsifying with the fat in the sauce. Stir in your cheese until nice and gooey, the pour into a casserole dish.
Top with crushed tortilla chips or hard taco shells (just enough to create a thin layer over the top fully covering the pasta). Spray with oil, then pop in the oven for 20mins, or until the top goes nice and golden. Be vigilant, top goes golden to burnt quickly.
Top with your favourite taco toppings (suggestions in ingredients list) and enjoy!

How to Make Mexican Pasta Bake!
Hearty, comforting casserole loaded with ground beef, pasta, salsa, corn and topped with Mexican Cheese makes this Mexican Pasta Bake a delicious and easy dinner recipe that the entire family will pile high on their plates.

INGREDIENTS
1 lb ground beef
15 oz can corn drained
2 c. uncooked spiral pasta
15.5 oz jar salsa
10.75 oz can condensed cream of chicken soup
1 c. shredded Mexican cheese divided
INSTRUCTIONS
Preheat oven to 350 degrees.
Prepare pasta according to package directions.
Brown beef over medium heat in a large skillet until no longer pink. Drain off grease. Stir in salsa, corn, soup and 1/2 c. of cheese. Heat mixture through. Stir in drained and cooked pasta to mixture.
Transfer to greased 2 quart casserole dish. Sprinkle with remaining cheese.
Cover and bake at 350 degrees for 15-20 minutes or until cheese is melted.
NOTES
Ingredient Tips
I like to use spiral pasta, but you can substitute other short pasta shapes, too. So feel free to use penne, cavatappi, or even macaroni if that’s what you have on hand.
You can substitute the ground beef for turkey.
Do you have to cook pasta before making a pasta bake?
For this Mexican casserole you do need to cook the pasta first. There’s not enough liquid in the casserole to cook the pasta, so don’t skip that step!
Should you cover a pasta bake in the oven?
Yes, you should bake it covered! This will keep the moisture from evaporating so your casserole is not dry.
How long do leftovers keep?
The will keep for two to three days in the refrigerator. Just keep them in an airtight container!

1 28oz can chopped tomatoes

1 bell pepper
4 cloves minced garlic
1 lb ground beef 80/20
1 lb mild italian sausage
1 tsp worcestershire sauce
1/4 cup dry red wine
italian seasoning
red pepper flakes
salt/pepper/garlic/onion powder
2 pinches of sugar
fresh basil
2 tbsps tomato paste
1 package spaghetti
2 tbsps butter
salt, pepper, garlic, onion powder
sugar as needed to balance acidity

Shredded cheddar cheese (enough to top the pasta before it goes into the oven - 1-2 cups)
Cheese Layer:
1 cup shredded parmesan cheese
16 oz Mozzarella cheese (save some for the top)
1/2 cup sour cream
5.2 oz boursin garlic and herb cheese
fresh chopped parsley
salt, pepper, garlic, onion powder
sugar as needed to balance acidity
Directions:
Start by making your pasta sauce. Heat olive oil in a dutch oven or sauce pot and add onion and bell pepper over medium heat. Once the veggies are tender (after about 3-4 minutes) - add in your ground beef and italian sausage. Cook the meat until fully cooked and begin to season with all purpose seasoning (salt, pepper, garlic, onion powder) red pepper flakes, and italian seasoning. Next, add in garlic paste and tomato paste and mix to combine. Cook 1-2 minutes and then deglaze with red wine or chicken stock. Bring to a boil and then add in your tomato sauce and chopped or crushed tomatoes. Allow the sauce to come up to a simmer and cover with a lid (on low heat) and simmer for at least 30-45 minutes and up to 1-2 hours - stirring occasionally. Add fresh Basil leaves for added flavor. Add sugar as needed to balance the acidity (should only need a pinch or two)
In a separate mixing bowl, add your cheese layer ingredients and mix to combine. Season to taste and refrigerate until needed. Boil pasta to package instructions.
In a casserole dish, add a thin layer of meat sauce to the bottom and then add sauce to your spaghetti noodles to coat. Add a layer of sauced spaghetti and then your cheese layer - top with shredded cheese. Add another layer of spaghetti and top with a thin layer of meat sauce and shredded cheese. Bake on 375 for 30 minutes or until browned and bubbling.

This One-pot Cheesy Taco Pasta is one of the easiest dinner recipes that everyone loves. See how to make it!

Ingredients
3 cups small shells pasta
1 pound lean ground beef
1/4 cup taco seasoning
1 cup water
1 cup tomato sauce
1 cup shredded cheese cheddar or mozzarella
fresh parsley chopped, optional
Instructions
Place a large frying pan on medium-high heat.
Add ground beef and stir until it is no longer pink. Drain fat from the pan.
Add onions and garlic to the beef. Stir 2-3 minutes until translucent.
Stir in the tomato sauce, taco seasoning, water and pasta.
Cook for 5-10 minutes until the pasta is done, stirring occasionally.
Remove from heat and stir in cheese and optional fresh parsley. Serve and enjoy!
