6 Nests fideo (angel hair
Pasta) 12 oz Jar picante sauce (mild or
Medium) 1 c Julienned nopalitos (cactus)
OR 12 oz jar pickled cactus Drained and rinsed OR (in a Pinch) 2 julienned and Blanched bell peppers 1 cn Pinto, poquito, anasazi,
Pink or other beans of your Choice 1 sm Can (4 oz?) diced green
Chiles cook the pasta according to package directions. blanch cactus, if using fresh. drain beans and green chiles. toss all ingredients together. this dish is best at room temperature, although it is good hot or cold also. 1 box of spaghetti
5 roasted poblano peppers
Optional 2 roasted Anaheim peppers
1 1/2 cups half & Half or heavy whipping cream
1 cup chicken broth
2 garlic cloves
1/2 an onion
1/2 tsp black pepper
1 tsp salt
1 tsp Mexican oregano
Small bunch of cilantro
Topping- Cotija cheese or parmesan cheese

???????????????????? Mexican pasta that is toasted, then simmered in a slightly spicy tomato sauce!
Ingredients:
3-4 T vegetable oil
1 C diced onion
3 cloves garlic, finely chopped
8 oz fideo (pasta broken into pieces), or you can use thin spaghetti broken into pieces
1 can 14.5 oz can diced tomatoes (un-drained)
1 can 10 oz rotel tomatoes (un-drained)
2 C chicken broth
1- 4oz can chopped green chiles
1/2 t salt
1/8 t pepper
Feta cheese, crumbled
Heat a heavy bottom skillet on stove top with 3-4 T vegetable oil in it.
Sauté onion until translucent.
Add un-cooked fideo pasta to pan.
Lightly brown the pasta.
Make a space in center of pasta and add garlic.
Sauté 30 seconds.
Add chicken broth, tomatoes, rotel, salt, pepper and green chiles.
Slow simmer 7-10 minutes until most of the liquid is absorbed into pasta and pasta it tender.
Ready to serve!
Sprinkle with feta cheese crumbles and dig in!

She prepared this dish throughout the year, Winter or Summer and not only is it delicious and easy but it’s very affordable and it goes a long way. Everyone I know loves this dish, and children love it too. We always had it with delicious beans on the side and freshly made tortillas. I have continued the tradition and am sharing this wonderful recipe with you, I hope you give it a try.❤️
