How To make Japanese Beef Stir Fry
12 oz Beef flank steak, partially
Frozen 1 tb Peanut or vegetable oil
1 lg Red bell pepper, cored,
Seeded and thinly sliced, About 1 1/4 cups 1 sm Onion, thinly sliced, about
3/4 cup
1 tb Chopped fresh gingerroot OR
1 t Ground ginger
1 cl Garlic, crushed
1/8 ts Crushed hot red pepper
12 oz Fresh Chinese pea pods OR
2 pk (6 oz) frozen, thawed
1 lg Head escarole, about 1 lb.,
Coarsely chopped, about 8 Cups 1 tb Soy sauce
1/2 ts Light brown sugar, firmly
Packed
Using a sharp knife,held almost parallel to cutting surface,cut partially frozen flank steak into very thin slices.In 12" skillet over medium high heat,heat oil;add beef;cook 2 to 3 minutes,stirring frequently until browned.Using slotted spoon,remove meat to plate; keep warm.To drippings in skillet,add red bell pepper,onion,ginger, garlic and crushed red pepper.Cook about 4 minutes,stirring constantly until vegetables are crisp-tender.add pea pods,escarole,soy sauce and brown sugar.Cook about 1 minute,stirring constantly until pea pods are heated through and escarole is wilted.Stir beef into vegetables. Makes 4 servings.

Today I want to show you a dish considered Japanese fast food - Gyudon! (also known as a beef bowl) but this time let’s make it a bit more luxury than the fast food version, okay?

Ingredients:
- 200g Beef Loin (Thinly Sliced)
- 140ml water
- 100ml of mirin
- 60ml of soy sauce
- 2tbsp of brown sugar
- a small bit of dashi fish stock (optional)
- ½ Onion
- ½ a washed burdock root
-1 egg (per Gyudon) - for onsen tamago
- 480g of rice (for 3 portions), 650ml of water.
How to make:
- Add 140ml water, 100ml of mirin, 60ml of soy sauce, 2 tbsp of brown sugar and a sprinkle of dashi fish stock into the pan you will use to cook the beef
- Cut half a root of washed burdock into small slices and add to the water straight away (to avoid it oxidizing) ginger can also be substituted instead of burdock
- Cut half an onion into thin slices and add to the liquid as well
- Turn to a high heat with the lid on
- Once it starts to boil, add your thinly sliced beef and cook for a few minutes until cooked through
- Let the Beef Stew in the sauce for around 5 minutes
- Serve on top of your rice!
If you want to make onsen tamago:
- Heat up water in a saucepan to 65C or 150F (don’t let it boil!)
- Add your eggs to the saucepan and leave for 30 minutes
If you want to make your own rice without a rice cooker (For 3 portions) :
-Thoroughly wash 480g of rice until the water runs clear
- Leave the rice soaking in water for at least 30 minutes
- Add the rice to a pot or saucepan with 650ml of water (this ratio may seem unusual, but in Japan we measure rice in ‘Go’ - which is 150g)
- Put on a lid and heat up the rice until it begins to boil, turn the heat down to medium-low and wait for 10 minutes
- After 10 minutes or once the water has disappeared from the rice, turn off the heat and let steam in the pot for another 10 minutes

Equipment
A wok, skillet, or sauté pan
Ingredients
Stir-fry sauce
3 tablespoons soy sauce, regular or light
1 tablespoon Shaoxing wine sub: Chinese cooking wine, dry sherry, or sake
2 tablespoons oyster sauce
2 teaspoons sugar
1 tablespoon cornstarch
1 tablespoon sesame oil, dark-colored variety
½ cup water
For the stir-fry
1 pound flank steak (see note)
¼ teaspoon baking soda
1 tablespoon cornstarch
1 medium onion sliced into strips
1 medium red bell pepper sliced into strips
3 scallions cut into 2-inch sections
2 teaspoons minced ginger
4 cloves garlic minced
Ground pepper to taste
Neutral-flavored oil for searing and sautéing
Instructions
1. Make the sauce by combining soy sauce, Shaoxing wine, oyster sauce, sugar, cornstarch, sesame oil, and ½ cup of water. Set aside.
2. Slice the meat thinly (about ¼ inch) against the grain or across the muscle fibers.
3. Add 2 tablespoons of stir-fry sauce to the meat and mix them together.
4. Add baking soda and cornstarch. Mix them well, so they are evenly distributed. Velvet the meat for about 15 minutes while you prepare the rest of the ingredients.
5. Set your wok or skillet over high heat. Add a bit of oil to coat the bottom when the pan is almost smoking. Spread the meat in a single layer.
6. Sear for about 2 minutes without touching them. Let the other side brown for another minute. Transfer to a plate.
7. Cook onions and red bell peppers for a minute until slightly blistered. Add scallions and push them to one side. Slightly lower the heat at this point.
8. Add a bit of oil and sauté ginger and garlic for about 30 seconds. Toss them all together.
9. Add meat and sauce to the pan. Let the sauce slightly thicken for about 30 seconds.
10. Add some ground pepper and mix them together. Turn off the heat.
