Coffee Cookies Recipe
Ingredients:
1 ¼ cup all purpose flour
1 tablespoon Maika’i Freeze Dried Kona Coffee
¼ teaspoon baking soda
⅛ teaspoon salt
½ cup brown sugar
¼ cup granulated sugar
½ cup unsalted butter
1 egg
1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 350F. Line two baking sheets with parchment paper or a silicone mat and set aside.
2. In a medium mixing bowl add flour, Maika’i Freeze Dried Kona Coffee, baking soda, and salt, Stir to combine. Set aside.
3. In the bowl of a stand mixer add brown sugar, granulated sugar, and butter. Mix until well combined and light and fluffy. Then add egg and vanilla. Mix until well combined.
4. Add dry ingredients and blend just until combined.
5. Using a large cookie scoop, scoop out about 3 tablespoons of dough and place on the parchment lined baking sheet. Be sure to leave about one inch between each cookie to allow the cookies space to rise, about 12 large cookies per baking sheet.
6. Bake for 20-25 minutes or until golden brown.
7. Transfer cookies to a wire rack to cool and ENJOY!

This coffee has so many names; Dalgona Coffee, frothy coffee, whipped Coffee, cloud Coffee, magic coffee and more. No matter how you call it, this cold coffee is AMAZING! This coffee has been viral in Korea during quarantine time, then it got viral on TikTok and now it is very trendy all over the internet.
Dalgona Coffee is a cold latte drink that comes with a velvety smooth and sweet coffee foam on top. The combination of cold milk and the bittersweet coffee is absolutely delicious. Dalgona coffee is inspired by the South Korean dalgona candy, a toffee sponge that resembles the creamy dollop that tops the ice coffee.

This recipe makes 2 medium servings
Ingredients:
2 tablespoons Instant coffee
2 tablespoons Sugar
2 tablespoons Hot water
1/2 cup (120ml) Milk of your choice
2-3 Ice cubes
Directions:
1. In a large mixing bowl place coffee, sugar and hot water (1:1:1 ratio).
2. Using a hand mixer or electric mixer, whisk until thick and creamy.
3. Fill only 3/4 of a cup with cold milk and add ice cubes.
4. Top it up with foamy whipped coffee. Mix well before drink. Enjoy!
Notes:
• Do I have to use sugar? The sugar helps the coffee whip to a fluffy and stable texture that holds its shape for a while. You can reduce sugar amount, but I’m not sure it will be so fluffy. If you’re really sensitive to sugar, you can reduce it down, just know that your coffee won’t be as fluffy.
• What kind of milk to use: You can use cow’s milk, dairy free milk such as almond milk, oat milk or any other kind of milk that you prefer.
• Can I make Dalgona coffee without electric mixer? Yes, you can whip the coffee using a regular whisk, it may take a little bit more time, but it absolutely possible.

Homemade Coffee Ice Cream | The Recipe Rebel

Ingredients
▢1½ cups heavy whipping cream
▢1½ cups whole milk
▢¾-1 cup granulated sugar use more or less according to your tastes
▢4 egg yolks
▢1 tablespoon instant coffee or espresso powder
▢1 tablespoon vanilla extract
Instructions
Freeze ice cream maker bowl according to instructions.
Whisk together cream, milk, sugar, egg yolks and coffee in a large saucepan until smooth.
Place the pan on medium heat, and cook and whisk constantly until thickened. It will be noticeably thickened, but not thick like pudding. Stir in vanilla. Taste and adjust sweetness as desired.
Pour into a large glass measuring cup or bowl and press a piece of plastic wrap to the surface to keep a skin from forming.
Refrigerate until completely cold (you can speed this up by placing it in the freezer and stirring every 10 minutes).
Place in the ice cream maker and churn for 20-30 minutes or until a soft serve consistency.
Pour into a glass loaf pan or baking dish and freeze until firm, about 4-6 hours.
I recommend letting sit at room temperature for 5-10 minutes before serving. Cover leftovers with plastic wrap and freeze up to 3 months.

Chocolate mac nut crust
1-1/2 c. chopped macadamia nuts, toasted
1-1/2 c. chocolate cookie crumbs
1/2 c. brown sugar
1/4 lb. butter, melted
Grind all ingredients except butter in a food processor until mixture resembles fine crumbs. Add butter and mix thoroughly. Press into 10-inch springform pan.
Cheesecake
4 eggs, well beaten
1-1/2 lb. cream cheese, softened
1-1/4 c. sugar
1 c. sour cream
1 Tbsp. coffee liqueur
1/4 c. strong Kona coffee (I used Mulvadi 100% Kona Instant Coffee)
Cream eggs, cream cheese and sugar. Fold in sour cream and liquids. Pour mixture into crust lined pans. Bake at 300 degrees for 1-1/4 hours. Cool, then chill for a couple of hours before service.
