Florentine Lace Cookies
Florentine Lace Cookies are also called Lace Cookies because of the pattern of the cookies that is formed when they are baked. Florentine lace cookies can be made with either oatmeal or with almond flour. Oatmeal is a cheaper alternative but still equally as good as almond meal. It is a matter of personal preference. Mixing these cookies is very easy. You do not even need a mixer. Baking the cookies however, will take patience since you can bake only a few pieces at a time. Please give the cookies enough space to spread out in your cookie sheet. Put together the Florentine cookies with melted chocolates. The quality of your melted chocolate will determine the quality of your cookies. Keep these cookies inside the refrigerator to keep them crisp. They will last for at least 2 - 3 months in your refrigerator or 5 months in the freezer. That is, if you can control yourself from eating them because they are so addictive!

Salt: a pinch (to taste)
Egg: 1 small (beaten)
Vanilla Essence: 1/2 tsp
Walnuts/Groundnut (chopped): 25gm

Ingredients
4 Tablespoons unsalted butter
1/2 cup light brown sugar firmly packed (100g)
1/4 cup granulated sugar 50g
1/4 cup light corn syrup 60ml
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour 31g
2/3 cup finely chopped almonds¹ 90g
Instructions

00:17 Preheat oven to 350F and line cookie sheet with parchment paper.
00:22 In a medium-sized saucepan, combine butter, sugars, and corn syrup.
00:45 Cook over medium heat, stirring constantly, until sugar has melted and mixture just begins to boil.
01:13 Once boiling, remove from heat and stir in vanilla extract, salt, flour, and finely chopped almonds, stirring until completely combined.
02:18 Allow to cool for five minutes, then drop by 1 ½ teaspoon onto prepared cookie sheet, spacing cookies at least several inches apart (cookies will spread quite a bit in the oven, so give them some space!).
02:57 Bake on 350F for 9 minutes, rotating halfway through baking. You can usually tell the cookies are finished baking when they stop bubbling and are a light golden brown in color. Keep an eye on them because they can burn quickly.
03:24 Allow cookies to cool completely on baking sheet. They won't be crisp until cooled.
03:35 Keep in mind that the lace cookie batter/dough will thicken as it cools, that is completely fine and won’t affect the outcome of the cookies.

Lacy Oatmeal Cookies
These thin crispy cookies are not what you've come to expect from an oatmeal cookie. Because they can be made with the most basic of pantry staples, these cookies have become a regular when we don't want to arrive empty handed or when we need a cookie fix!
Here's what you need:
1 egg
3Tbsp flour
3/4 cup sugar
1/4 tsp baking powder
pinch of salt
1 1/4 cups old-fashioned oatmeal
(not quick-cooking, have some self respect)
1/2 cup butter (1 stick)
1 teaspoon almond extract
(good substitutes: vanilla extract, cinnamon)
*I added 1 Tbsp sesame seeds, t'was GOOD*
Preheat oven to 375 degrees F.
Beat the egg, melt the butter and stir everything together!!!
This is a loose enough batter, you can stir it by hand and you'll only dirty one bowl!
Drop small teaspoons, well spaced, on a parchment paper lined cookie sheet. Bake 10-12 minutes.
Makes about 20.
