BEEF CACCIATORE
~ BEEF CACCIATORE ~
In italian, Cacciatore means hunter. You can serve this with rice, pasta or mashed potatoes
Ingredients:
- beef chuck roast ( you can use chicken)
- olive oil / or regular oil
- onion
- garlic
- red bell pepper,
- canned tomatoes ( or fresh whatever is available)
- black olives (or green)
- red/white wine,
- beef stock
- fresh basil
- rosemary
- oregano
- mushrooms
- capers (optional)
INSTRUCTION:
- season meat with salt & pepper.
- in a skillet pour some olive oil. Then sear the meat and set aside.
- in the same skillet, add onion, garlic
- add the meat & cover
- add canned tomatoes
- add bell pepper
- rosemary & oregano
- add red/white wine (optional)
- cook until tender (at a very low simmer.
- add beef stocks if necessary.
- add mushrooms and black olives and cook for another 10-15 minutes
- salt & pepper to taste.

Dal Principe Giannini al Principe Giallini è un attimo. Due simboli assoluti di Roma e della romanità con la R maiuscola. Il primo calciatore, il secondo attore, entrambi fenomeni, accomunati dall'estro e dal talento tipici dei fuoriclasse.
Se il primo è stato il Principe della Roma calcistica, il secondo interpreta il Principe della Roma nobiliare nel nuovo film di Edoardo Falcone in uscita il 17 Novembre. Distribuito da Lucky Red, Il Principe di Roma vede protagonisti altri attori del panorama italiano del calibro di Sergio Rubini, Giulia Bevilacqua, Giuseppe Battiston.
È un film che racconta bene la romanità ispirandosi a Il Marchese del Grillo e A Christmas Carol. Marco Giallini, infatti, interpreta con delicatezza temi universali sempre attuali, ri-vestendo i panni di Scrooge, il personaggio principale del racconto scritto da Charles Dickens.

), Il Principe di Roma confessa al suo medico di aver fatto un brutto sogno. Il medico, dopo aver indagato, ha pronta la diagnosi: indigestione. Abbacchio alla cacciatora, fagioli con le cotiche e un paio di ciambellette col vino per ripulirsi la bocca in effetti è un tantino troppo. O forse non avranno saputo cucinarlo? Chissà.
E allora, come fare un abbacchio alla cacciatora leggero e che non ritorni su? Nella versione più romana che ci sia? Ci pensa Chef Max!

03:00 Se non lo compri già tagliato a pezzi, ti mostro come tagliare l'abbacchio a colpi di mannaia
04:04 In una pentola di ghisa, versa abbondante olio e.v.o. e fai rosolare i pezzi di carne. Condisci con del sale. Dopo che si sarà colorato, aggiungi del vino bianco. Togli il grasso ai rognoni e aggiungi anche quelli. Mescola e insaporisci con qualche rametto di rosmarino. Chiudi con il coperchio, abbassa il fuoco e lascia cuocere per 30 o 40 minuti
05:57 Prepariamo la salsa: in un bicchiere versa due spicchi d'aglio, l'aceto di vino bianco, le alici sott'olio, il peperoncino in polvere, gli aghi del rosmarino e frulla con un mixer
06:56 Dopo 20 minuti di cottura dell'abbacchio, togli il rosmarino dalla pentola e versa la salsa, filtrandola con un colino. Aggiungi le olive denocciolate e qualche pomodorino del Piennolo tagliato a metà. Mescola e lascia cuocere con coperchio e a fuoco medio per altri 20 minuti

I love this chicken cacciatore recipe not only because it’s Italian but because it’s a classic recipe that is so delicious.
I can’t lie, I’m starting to get nervous that we’re losing these traditional recipes like chicken cacciatore.
People now-a-days are taking these old traditional recipes and adding in all sorts of crazy stuff and saying it’s authentic.

Ingredients for this Authentic Chicken Cacciatore Recipe
• ¼ cup of reconstituted dried porcini mushrooms
• 1 whole chicken broken down into parts
• 2 tablespoon olive oil
• ½ peeled and small diced yellow onion
• 3 small diced ribs of celery
• 2 peeled and small diced carrots
• 4 finely minced cloves of garlic
• 1 cup each sliced baby portabella and button mushrooms
• 1 cup of dry red wine
• 2 28-ounce cans of whole peeled tomatoes
• 1 tablespoon of chopped fresh parsley
• 1 ½ teaspoons of chopped fresh rosemary
• sea salt and fresh cracked pepper to taste
serves 5
prep time: 20 minutes
cook time: 50 minutes
procedures:
1. Porcini mushrooms: pour 2 cups of boiling water over top a ½ ounce of dried porcini mushrooms and sit for 20 minutes.
2. Finely strain the mushrooms and reserve ½ of the liquid.
3. Rinse the mushrooms, squeeze out all of the liquid and roughly small chop.
4. Season the chicken parts well on all sides with salt and pepper.
5. Heat the olive oil into a large rondeaux pot over medium heat and brown the chicken parts well on each side, about 4 minutes per side.
6. Remove the chicken and set aside.
7. Next, add the onions, celery, carrots, garlic, and mushrooms to the pan and sauté for 6 to 7 minutes.
8. Deglaze with the wine and cook over medium heat until it is almost gone, about 5 minutes.
9. Pour in the reserved porcini mushroom liquid, tomatoes, herbs, salt and pepper and stir.
10. Add the browned chicken back in and add a lid to the pot and simmer over low heat for 25 to 30 minutes.
11. Garnish with chopped parsley.

Ingredients -
2 1/2 Tbsp (50ml) - Unrefined Olive Oil
5-6 - Large Chicken Thighs, Bone In & Skin On (Boneless & Skinless Is Fine Too)
2 - Brown (Yellow) Onions, Diced
5 - Garlic Cloves, Crushed & Roughly Chopped
1 - Large Red Bell Pepper (Capsicum), Thinly Sliced or Diced
2 - Carrots, Washed & Thinly Sliced
250g (8.8oz) - Button Mushrooms, Thinly Sliced
5g (0.3oz) - Thyme
7g (0.25oz) - Flat Leaf Parsley, Roughly Chopped
7g (0.25oz) - Basil
1 tsp (0.5g) - Dried Oregano
1 tsp (0.5g) - Dried Rosemary
3 - Dried Bay Leaves
1/2 Cup (125ml) - Red Wine or Chicken Stock
3 Tbsp (42g) - Concentrated Tomato Paste
2 1/2 Cans (1kg) - Canned or Diced Tomatoes
1 tsp (0.5g) - Dried Chilli Flakes
Sugar To Balance Acidity (Optional)
Seasoning To Taste
Notes -
This recipe can contain olives but I feel it's unnecessary in this dish and the flavour is overpowering. If you wish to add olives, add in 100g of halved & pitted kalamata olives.
