Delicious slow cooked Lamb Bhuna | Possibly my favourite lamb curry!
Slow-Cooked Lamb Bhuna - a hot curry, made by frying spices gently, before adding the meat, tomatoes and stock and then letting it simmer away in the oven until tender. It's served in a lusciously thick sauce that clings to the meat.
If you or someone in your family isn't keen on the heat you can leave out the dried and fresh chillies for a milder dish that's still super rich and tasty.

Ingredients:
2 tbsp ghee or oil
1 tsp cumin seeds
1 cinnamon stick
4 cardamom pods
1 large or 2 medium onions peeled and chopped into thick chunks
3 cloves garlic minced
2 tsp minced ginger
6 green birds eye chillies 2 finely chopped, 4 left whole
2 bay leaves
1 tsp chilli flakes
2 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1 pinch of ground cloves
½ tsp salt
½ tsp black pepper
1 kg (2.2 lbs) lamb chopped into 1-inch chunks (use shoulder, leg or neck)
1 red bell pepper chopped into large chunks
6 medium tomatoes roughly chopped
3 tbsp tomato puree
360 ml (1 ½ cups) lamb or chicken stock
To serve:
Boiled or pilau rice
Chopped coriander cilantro
Chapati
Raita
Instructions:
1. Preheat the oven to 170C/325F
2. Heat the ghee over a medium heat in a large oven-proof pan.
3. Add the cumin seeds, cinnamon and cardamom. Fry for 2-3 minutes, until the spices release their fragrance.
4. Add the chopped onion, garlic and ginger and fry, stirring often, for 5 minutes, until the onion is softened and lightly browned.
5. Add the green chillies, bay leaves, chilli flakes, ground coriander, ground cumin, turmeric, cloves, salt and pepper.
6. Stir and cook for 2-3 minutes.
7. Add the lamb and stir to coat in the spices. Cook for 5-7 minutes, until sealed.
8. Add in the chopped red pepper, chopped tomatoes, tomato puree and stock.
Stir together and bring to the boil.
9. Cover the pan and place in the oven for 1 hour 15 minutes to 1 hour 30 minutes - until the lamb is tender and the sauce has thickened. Check on it a couple of times in the last 30 minutes or so so ensure the liquid isn't running dry. Top up with a splash of boiling water if it is.
10. Remove from the oven and serve topped with fresh coriander.
11. I like to serve mine with boiled or pilau rice, chapati and raitha.
Notes:
Can I make it ahead?
Yes, you can make the curry, then cool, cover and refrigerate.Reheat in a pan over a medium heat, stirring occasionally until piping hot throughout.Or reheat in the oven (170C/325F) with the lid on, for around 30 minutes, until piping hot throughout.You may need to add a splash of water or stock to loosen up the curry when reheating.
Can I freeze it?
Yes, make the curry, then cool, cover and freeze. Defrost overnight in the refrigerator and reheat as per the make-ahead instructions above.

Lamb curry is popular dish from the Kashmiri cuisine known as Rogan josh. Meaty lamb cooked exceptionally well in a delicious blend of aromatic spices and flavors indulging your taste buds in a creamy, rich, spicy, aromatic and exotic meat dish that you will always crave for!
Ingredients:
cumin pdr 1 Tablespoons
ginger garlic paste 1 Tablespoons
gr chillies 2 Numbers
lamb 500 Grams
oil 1 Tablespoons
pepper pdr 1/2 Teaspoons
turmeric 1 Pinch
red cilli pdr 1 Teaspoons
coconut pdr 1 Tablespoons
whole garam masala, cardamom,clove,cinnamon 3 Piece
cumin 1 Teaspoons
coriander pdr 2 Tablespoons
coriander leaves 1/4 Bottle
chopped onion 2 Small
salt 1 To Taste
Directions:
Add oil to hot pan, add whole spices, cumin and chopped onion. Cook till they are slightly brown at the edges.
Add salt,nbsp;turmeric, ginger garlic paste, when cooked add cleaned lamb pieces and cook for some time.
Add chilli pwdr, coriander powder, cumin pwdr and mix.
Add water and cover and cook for 20-30 min. till lamb is 90%cooked. (You can also cook lamb in pressure cooker).
Add gr chillies, coconut pwdr and pepper pwdr and cook for another 10 min. till the sauce is thickened.
Serve hot with rice, roti or naan.

The Lamb Curry Ingredients:
1 tbsp. vegetable oil
1.5kg (3lb) lamb shoulder - knuckle end weighing approx
1 large onion peeled and chopped
4 cloves garlic peeled and minced
1 large piece of ginger about the size of your thumb, peeled and finely chopped
1 tsp salt
2 tbsp garam masala
2 tbsp curry powder
1 tsp paprika
1 tsp cinnamon
350ml (1 cup) chicken stock water plus a stock cube or bouillon for gluten free is fine
2 tins 400g (14oz) each of chopped tomatoes
2 tbsp tomato puree/paste
2 tsp sugar
6 cardamom pods sew them together with a piece of string so you can easily fish them out later
400ml (14oz) can of coconut milk/cream
Handful of chopped coriander to serve

INGREDIENTS
For Marination -
1 kg lamb
1/2 cup yogurt or curd
salt
2 tsp Kashmiri chilli powder
1 tbsp ginger garlic paste (Prefer fresh but can use store bought)
2 green chilis
2 tbsp coriander powder
1 tsp cumin powder
2 tsp turmeric
1/2 tsp garam masala
For the gravy -
3 tbsp oil
4 green cardamom
1 inch cinnamon stick
5 cloves (Cardamom, cinnamon and Cloves can be replaced with additional 1/2 tsp of Garam Masala, but whole spices are preferred)
5 bay leaves
2 large onion thinly sliced
Marinated lamb
1/2 tsp garam masala as finishing spice
Coriander for garnishing

How To Make Mutton Curry - How To Make Lamb Curry - Mutton Curry For Beginners
In this video I have explained step by step in detail how to make a mutton curry using basic common ingredients. If you master this recipe then you will be able to make any type of mutton curry.
Ingredients required for making mutton curry - serves 6 to 8
* 1.2 kg/ 3 lb mutton or lamb with/without bones. The shoulder and leg piece is the best.
* 500 gm/ 1 lb/ 3 large onions
* 40 gm/ 2 oz ginger
* 50 gm garlic / 1 whole head of garlic
* 2 green chillies (optional)
* 200 gm/ 7 oz/ 3/4th of a cup of plain unflavored yogurt
* 1 tablespoon Kashmiri red chilli powder. Please adjust proportion according to your preference.
* 1 teaspoon turmeric powder
* 1 tablespoon ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1 heaped teaspoon garam masala powder
* 2 dried bay leaves
* 4 to 5 green cardamoms
* 4 to 5 cloves
* 2 inch long cinnamon stick
* 2 teaspoons salt or as per taste
* 4 large potatoes cut into half (totally optional)
* hot water
* 3 to 4 tablespoons oil
Serve this with rice/roti/naan/paratha. The taste of any meat curry gets better the next day.
