How To make Lbj Pedernales River Chili
4 lb Venison, bite size
- Chili grind fine *OR* Chuck, well trimmed, ground 1 lg Onion, chopped
2 Garlic cloves, minced
1 ts Oregano
1 ts Cumin seed
2 c Hot water
6 ts Chili powder
1 1/2 c Canned whole tomato
2 ds Liquid hot pepper sauce
Salt to taste Place meat, onion and garlic in a large heavy skillet or Dutch oven. Cook until light colored. Add oregano, cumin, water, chili powder, tomatoes, hot pepper sauce (more or less to taste), and salt. Bring to a boil, lowering heat, and simmer for one hour. Skim off fat during cooking.

Ripe Tomato Relish Recipe Lady Bird Johnson 1960's
1 gallon ripe tomatoes
2 cups chopped onion
1 cup chopped bell pepper or hot pepper to taste
1/4 cup white vinegar
1/2 cup sugar
1/4 cup Worcestershire sauce
2 tbs season salt
1-2 tbs coarse black pepper to taste
2 tbs table salt or to taste
Boil and peel tomatoes cut up after peeling to desired size
Mix all ingredients in large pan simmer for 1 hour
Place sauce in jars and water bath 10 minutes. Makes approx 4 quarts.

Today we revisit an old recipe found in the stacks of the Johnson Presidential Library in Austin, Tx. Found on a 3x5 card in First Lady's Lady Bird Johnson's handwriting was written the recipe Pedernales River Chili The recipe itself is very simple, but with a couple of tweaks it gets WAY better. Made a yankee or Northerner style cornbread that was REALLY good and a shaved brussel sprout salad that was..... a salad.
