This leek and mushroom pasta is very easy to make and incredibly delicious! The combination of leek, garlic and mushrooms is a match made in heaven.
This tagliatelle pasta recipe has no meat but we use lots of mushrooms which add tons of flavor to the pasta and makes it tasty and hearty.
If you're looking for a comforting and delicious vegetarian meal idea, try this tagliatelle pasta with leeks & mushrooms! the whole family will love it!
Servings: 2 - 3
Ingredients:
Ingredients for the sauce:
• 1 leek (120g)
• 1/2 red bell pepper (paprika)
• 5 garlic cloves, finely minced
• 2 cups (130g) white button mushrooms
• 1 pack (140g) Shimeji mushrooms
• 3 Tbsp vegetable oil
• 1 Tbsp chicken (or vegetable) bouillon powder
• 1/2 tsp salt (+ to taste)
• 1/2 tsp black pepper
• 1 tsp dried basil
• 1/2 cup (125 ml) cooking cream
• 1/2 cup (125 ml) almond milk
Ingredients for the pasta:
• 1 liter water
• 1 Tb salt
• 220 g tagliatelle pasta
Optional topping:
• 1/3 cup ( 30g )grated parmesan cheese

Barilla | Red Lentil Penne with Zucchini, Leek and Feta
RED LENTIL PENNE WITH ZUCCHINI, LEEK AND FETA
Serves 2
INGREDIENTS:
160g Barilla Red Lentil Penne
20ml Extra Virgin Olive oil
1 tbs sherry vinegar
1 tsp whole grain mustard
1 tsp honey
1 tsp smoked paprika
½ garlic clove, chopped
1 zucchini, sliced
30g spring onion
6 leaves fresh basil
50g feta
PREPARATION:
- Bring a large pot of water to the boil, season with salt and cook the Red Lentil Penne according to packet instructions.
- Drain the Penne and toss with 1 teaspoon of olive oil, place on a tray to cool down. Meanwhile
in a large frypan, saute the zucchini with garlic and a little olive oil until browned, season with salt and pepper to taste and set aside.
- In a large bowl combine the sherry vinegar, mustard, honey and smoked paprika and whisk together. Stream in the remaining olive oil and whisk until the dressing is thick. Season
with salt and pepper to taste.
- Once the zucchini has cooled down, combine all the ingredients in a large bowl
and serve.

2 tablespoons extra virgin olive oil
1 yellow onion
4 cloves garlic
6 cups (27 oz) zucchini grated with the large holes of a box grater
1 teaspoon oregano or thyme
1 teaspoon salt or more to taste
½ teaspoon black pepper
12 ounces pasta rotini, fusilli, farfalle, penne, or other
3 cups vegetable broth start with 2 cups or 500 g and add more if necessary
½ cup parmesan cheese grated, or dairy-free cheese
½ cup greek yogurt or dairy-free yogurt
¼ packed cup basil leaves
Garnish with
1 medium lemon the grated zest
2 tablespoons pinenuts
