How To make Lentil and Bulgur Cakes
1 c Dried lentils
3 c Water
Salt 3/4 c Butter
3/4 c Bulgur, fine grade
1 md Onion, finely chopped
1/4 c Finely chopped green or
-sweet red pepper 1/4 c Finely chopped green onions
-(white part and 2" of -green parts) 1/4 c Finely chopped parsley
1/4 c Finely chopped fresh mint
Paprika A vegetarian "kibbeh" with lentils in place of the meat. From "The Cuisine of Armenia," by Sonia Uvezian. Combine lentils, water and dash salt in heavy saucepan. Bring to boil over high heat, then simmer until lentils are tender, about 20 minutes. Add more hot water if needed. Stir in 1/2 cup butter and bulgur. Simmer 2-3 minutes. Remove from heat and cover. Set aside 15 minutes. In heavy skillet, melt remaining 1/4 cup butter over moderate heat. Add onion. Saute until golden brown, stirring frequently. In large mixing bowl combine sauteed onions, lentil and bulgur mixture. Dipping hands occasionally into bowl of warm water, knead mixture until well blended, 2-3 minutes. Add 3 tablespoons sweet pepper, 3 tablespoons green onions, 3 tablespoons parsley and 3 tablespoons mint to mixture and mix well. Adjust seasonings to taste. Keeping hands moistened, form mixture into 1/2 patties. Arrange on serving dish. Sprinkle with reserved sweet pepper, green onions, parsley and mint. Season to taste with paprika. Serve with cucumber and tomato salad.

Mujaddara: Lentils with Bulgur Recipe
1 cup lentils (du Puy French Green or Black Beluga)
1/2 cup bulgur
28 oz can diced tomatoes, drained
1 garlic clove, halved
3 Tbsp olive oil
Caramelized Onions
1 Tbsp mustard
1 Tbsp pomegranate molasses (or balsamic vinegar to taste)
2-3 Tbsp butter (or more olive oil)
Salt and pepper
Rinse the lentils. Place in a pot. Cover with 3 cups of cold water and add salt. Set over high heat, cover, and bring to a boil. Uncover, turn down the heat to maintain a very gentle simmer and cook until tender, but still toothsome, about 18 min.
Put bulgur into a bowl, add a little salt, cover with 3/4 cup of boiling water. Cover with plastic wrap or lid and let sit for 20 min.
Preheat the oven to 500F (260C). Place the tomatoes on a baking sheet. Add garlic and 3 Tbsp of oil. If tomatoes are unsalted, salt them. Mix well. Spread evenly and bake (with convection fan if possible) until slightly charred, about 20 min. Check frequently since all ovens are different.
Drain the lentils reserving 1/2 cup of cooking liquid. In a large skillet, mix the caramelized onions, roasted tomatoes, lentils, bulgur, mustard, pomegranate molasses, butter and enough lentil liquid to keep the mixture moist. Warm up and season to taste with salt.

MÜCANDARA PILAF
Servings: 4
Difficulty: Medium
Cooking time: 30 minutes
Prep time: 10 minutes
1 cup of green lentils, you can use any kind of lentils especially brown ones
1L water, 4 cups
6 onions, sliced into semicircles
1 teaspoon of salt
1 cup of rice, you can use any kind of rice
1/2 cup extra virgin olive oil
1 tablespoon sesame seeds
• Boil lentils in a pot and add a pinch of salt in the water. It takes around 10-12 minutes.
• Pour 2-3 tablespoons of olive oil in a large shallow pot. Add a pinch of salt and brown onions on low-medium heat fpr around 20 minutes.
• Soak the rice in water for 20 minutes.
• Spare the half of the brown onions for top.
• Add in the strained rice into the pot, pour 2-3 tablespoons of olive oil and a pinch of salt, then sauté until the rice transparent.
• Then add in the boiled lentils, 2 cups of lentils boiling water. 2-3 tablespoons of olive oil and a pinch of salt, give it a last stir and put the lid on. Transfer the pot to a smaller burner on low heat. Simmer for about 10 minutes.
• To understand if pilav is ready, make a hole in the centre of the pilav, if grains not sliding back into centre and there is no water left. It is ready. Turn the heat off and cover with a clean kitchen cloth. Leave the rice to steam for another 10 minutes.
• Meanwhile, crisp the spared onions with the sesame seeds.
• Serve the pilav with crispy onions on top. Enjoy warm or cold, it is delicious either way!
