Marinade

Hi I’m Aviva Goldfarb of the Six O’Clock Scramble, and I’m going to show you an easy, healthy recipe today.
This is actually grilled lime chicken with avocado salsa. I think you’re going to love it. It is grilling season, and it seems like almost everybody likes to grill chicken. So, we’re going to do a really easy grilled chicken recipe today.
I have here about a pound and a half to two pounds of chicken, and a lot of people like chicken breasts. I tend to prefer the dark meat chicken thighs—these are all boneless. So you can do one or the other, or a combination, and it’s really easy. We’re just going to get the chicken marinating while we make the salsa and heat up the grill.
So I’m going to combine—I love lime, so I’m going to use the juice of a whole lime in this little bowl. And the reason we’re going to combine it here first is so all of the flavors kind of meld and then you can get it evenly spread on the chicken. I love my citrus juicer. If you don’t have one of these, I use this almost every day, if not every day. So we’ve got about—a whole lime in there—maybe about a quarter cup.
We’re going to add about a tablespoon of olive oil, and then a teaspoon of kosher salt, or you can use whatever salt you have on hand. I lost my teaspoon, so I’m going to eyeball it. And, I’m just going to mix these together just to get them incorporated. And this is so easy: you just pour it right over the chicken. I don’t know why anybody feels the need to buy a bottled marinade when it’s so easy to make your own marinade. And once we get it in there, to make sure it’s really incorporated, we just flip the chicken, to make sure it gets the flavorful, juicy marinade on both sides.
So now we’re going to make the salsa to going with our grilled lime chicken. This is the avocado salsa; this is really the star of the show. So I’m going to take two avocados, and the way I like to cut avocados is to cut around them, cutting them in half, and then you separate the two halves, make sure it’s just ripe, and then I cut here to make it diced. And actually, if you are really feeling lazy, you can even use guacamole, but I think it’s so much better with fresh avocados if you can manage that. So then you just scoop those little slices, dices, right out of the avocado shell. And use a serving bowl, because that will save you a dish later—you can just serve it right in this bowl!
Okay, so now I’m going to get the next—rest of the ingredients for the salsa in the bowl. So we’re going to have one diced tomato, a quarter finely diced onion, some fresh cilantro, if you like cilantro, which I do, and then a little salt and a little fresh lime juice.
So now that you have these done, you can go ahead and grill your chicken because that doesn’t take too long, and then everything will be ready at the same time.
Now we have grilled our chicken that was marinated in the lime marinade, and we’ve made our salsa, so now all that’s left to do is plate it and eat it. So, you can either just keep a whole piece of chicken like this, or you can slice it, if you want it to go further or if you have people with smaller appetites in your family. I actually had cut the chicken in half cross-wise because they were so big and bulky, just to make everything about the same size. And then you simply put your avocado salsa on top, unless you have picky eaters who do not want that on top, you don’t need to do that—right on top of there, a nice big helping, and you can serve it like that. You can always put some peppers on there, or some freshly ground pepper, a little more lime juice, if you want to serve it with that. You’re good to go; it’s going to be totally delicious!

Ingredients :
For marinade
-1/4 cup olive oil
-2 limes juiced
-4 fresh garlic cloves smashed
-salt and pepper
-chicken breast boneless skinless
For salsa
-2 scallion chopped
-1 red pepper chopped
-1 mango cut into cubes
-cilantro for garnish
-1 avocado to eat with the meal (shown)
