This sausage making class was taught by my blacksmith husband (where it was recorded) at the Royal University of Midrealm. Listen as he explains how the protein matrix works. Watch as he makes a Zervalat (modernly, Cervalat) and then Mortadella. Both types of sausage were taken around the event for people to taste test and both received many compliments!
