Medieval cheese puffs
Mujabbana is the name of these little Arabic cheese puffs from the Middle Ages. I made them quite small for easy and quick frying. If you like, you can make them bigger. Source of this recipe is the anonymous medieval Book of Cooking in Maghreb and Andalus in the Era of Almohads.
You need: The same volume each of fresh cheese like feta or similar, butter and semolina, plus a little milk to work the dough and oil for frying.
