How To make Mango Upside Down Cake
2 c Sliced ripe mangos
2 tb Lemon juice
1 tb Margarine
1/3 c Brown sugar
1/4 c Margarine
3/4 c Sugar
1 Egg
1/2 c Milk
1 1/4 c Flour
2 ts Baking powder
1/4 ts Salt
Pour lemon juice over mangos and let stand 15 minutes. Melt 1 Tbsp. margarine in 8 in. cake pan or casserole. (Do not use iron skillet as mangos will darken.) Add brown sugar and cover with mango slices. To prepare cake batter, cream margarine; add sugar and cream; add beaten egg. Sift dry ingredients and add alternately with milk. Pour over mangos and bake 50 to 60 minutes at 375. When cake is done, turn upside down and serve while warm. Why You Should Cool Your Sponge Cakes Upside Down
Chiffon Cake (yield: two 8-in round layers)
1.75 c (210g) cake flour, sifted
1.5 tsp baking powder
1/2 tsp fine salt
3/4 c (150g) sugar
1/2 c (100g) vegetable oil
6 egg yolks
1/2 c (113g) water
1.5 tsp vanilla
6 egg whites
pinch of cream of tartar
1/2 c (100g) sugar
1. Whisk together the oil, yolks, water, and vanilla in a mixing bowl.
2. Add cake flour, baking powder, salt, and first sugar and whisk to combine.
3. In the bowl of a mixer, whisk the egg whites with a pinch of cream of tartar until frothy. Add the second sugar one tablespoon at a time and continue to mix on medium-high speed until medium peaks form.
4. Gently fold the meringue into the first mixture.
5. Evenly distribute the cake batter between two 8-in cake pans that have been prepared with only a circle of parchment paper on the bottom (no grease!)
6. Bake at 350F for 30-35 minutes or until golden brown and a toothpick comes out clean.
7. Remove from the oven and let the cakes cool upside down on a sheet of parchment.
8. Once completely cool, remove the cakes from the pan.

This is how to make Mango Upside-Down Cake:
Mango Upside Down Cake
Ingredients:
150 g Butter, softened (70 g for the Caramel Sauce + 80 g for the Cake) / 2/3 cup (5 Tbsp + 6 Tbsp)
130 g Brown Sugar/ 1/2 cup
2 fresh ripe Mangoes, sliced (about 1 cm thick)
250 g All-Purpose Flour/ 1 1/2 cups
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
200 g Sugar/ 3/4 cup
2 Eggs
1 tsp Vanilla Extract
150 g Sour Cream/ 1/2 cup
Directions:
1. Preheat oven to 165°C/ 325°F. Grease a cake pan (22 cm/ 9 inches) with butter and set aside.
2. In a small saucepan, add the butter and brown sugar. Cook just long enough for the brown sugar to melt. Remove from the heat.
3. Pour the sauce in the bottom of the prepared cake pan, arrange the slices of mangoes over it and set aside.
4. In a medium bowl, stir together flour, baking powder, baking soda, and salt. Set this aside.
5. In a large bowl, using an electric mixer, beat the remaining 80 g of butter on high until light and fluffy. Add granulated sugar and beat until well combined. Beat in eggs, one at a time, scraping down bowl as needed. Beat in vanilla extract.
6. With the mixer on low, add the flour mixture alternating with the sour cream. Beat this just until well combined.
7. Using an offset spatula, spread the mixture evenly over the mangoes. Bake until cake is dark golden brown and a toothpick inserted in center comes out clean for about 45 - 50 minutes. Let cake cool in the cake pan for about 10 minutes. No longer! Run an offset spatula around the edge of the pan and invert cake onto a serving plate.

Hi, I am a home baker, i use simple recipes to make different cakes, and use healthy ingredients.
Enjoy mango this season with a twist....with Mango upside down cake. Topped with mango slices and filled with the goodness of mango milk shake.
In Upside down cakes, after baking bottom becomes the top, so arrange mango slices in the pattern of final presentation.
Ingredients
Sugar - 1/2 cup
Butter - 1/2 cup
Milk powder - 1/2 Cup
Mango milk shake( thick) - 1/2 cup
Aata - 1 cup
Baking powder- 1/2 tspn
Baking soda -1/2 tspn
Elaichi powder- 1 tspn
(Vanilla essence or mango essence - optional, can be replaced or added with elaichi powder)
Mango to decorate.
