How To make Maple Rice Crisp Cookies
1 3/4 c All-purpose flour; sifted
3/4 ts Baking soda
1 ts Salt
1 ts Ground cinnamon
1/4 c Milk
1 Egg; beaten
1 ts Maple flavoring
1/2 c Shortening
1 c Sugar
1 c Presweetened rice crisp
-cereal 1/2 c Chopped nuts
1 1/2 c Presweetened rice crisp
-cereal Recipe by: Mary M McBride's Encyclopedia of Cooking Preheat oven to 350 degrees; grease cookie sheets. Combine and sift flour, baking soda, salt and cinnamon. Combine milk, egg and flavoring. Cream shortening and sugar until light and fluffy. Add dry ingredients and liquids alternately, one-half at a time. Stir only until dry ingredients are moistened. Fold in 1 cup cereal and chopped nuts. Toll rounded teaspoonfuls of dough in additional rice cereal. Place on prepared pans and bake for about 15 minutes. Remove from pans; cool. -----

Bacon and Maple Syrup layered Rice Crispy Treats
It may sound strange but it really is a different taste and if you like bacon and maple syrup you will love these. I did not intend to end up with a layered rice crispy treats but when I flattened out the rice treats in the pan they were to thin so to solve the problem I decided to layer the chocolate rice treats with the vanilla ones. Instructions to follow.
You will need:
cookie sheet lined with foil and sprayed with oil or butter
1 bag of large marshmallows (about 40)
2 TBS of butter
1 bag of rice cereal your choice of flavor. I used 4 cups of vanilla and 2 cups of chocolate rice cereal.
This is my recipe for what I did so change it up with different cereals and flavors
2 or more strips of apple bacon or Reg. Bacon cooked and crumbled.
2 tsp of real maple syrup mix both together in a bowl
in another bowl combine 1 bag of marshmallows and the butter
heat in microwave for 30 seconds, stir and if not melted place back in for another 30 seconds.
for the three types of flavors I used 3 bowls.
divide the mixture between the 3 bowls and add the 6 cups (2 cups to each bowl) mix cereal with the marshmallow mixture.
Place the cereal mixture onto the well greased sheet pan and press down using your hands, foil, smaller sheet pan. if you want the layered look then:
using a greased loaf pan, muffin pan or even a small bowl layer each type in the container pressing down each layer, over turn to a plate cut in serving sizes. enjoy.

Recipe
2 cups semi sweet chocolate chips
1/2 cup butter or margarine
1 cup peanut butter
1/2 cup corn syrup
Melt in a double boiler
Once melted pull off stove and add
1 cup icing sugar
2 cups rice crispies
1 small package of small marshmallows
spread in a buttered 9x13 pan and place in the fridge up to over night.
cut and serve
keep cool in fridge or store longer term in the freezer

RECIPE
Cookies:
1/2 cup vegan margarine
1/4 cup organic powdered sugar
1/2 tsp. maple flavoring or extract
1 1/2 cup white rice flour
1/4 tsp. salt
Frosting:
1 cup organic powdered sugar
1 Tbsp. vegan margarine
1/2 tsp. maple flavoring or extract
2 tsp. almond milk
Preheat oven to 350 degrees Fahrenheit. To a bowl, add vegan margarine, powdered sugar, and maple flavoring. Stir well. Add rice flour, and salt. Stir until the dough comes together. Roll dough out on parchment paper (you might need to roll the dough out between two pieces of parchment paper--it is a little sticky). Cut the dough into cookies, using a maple leaf cookie cutter. Carefully transfer the cookies to a cookie pan using a spatula. Continue to re-roll the dough scraps, and cut out cookies until you have used all the dough. Bake 8-10 minutes (don’t over-bake). Let the cookies cool on the pan for a bit and then transfer them to a cooling rack to cool completely. To make the frosting--to a bowl, add powdered sugar, vegan margarine, maple flavoring, and almond milk. Stir well. Frost the cooled cookies. Makes 12-18 cookies depending on the size of your leaf cookie cutter (the one I used was about 3-inches wide).
