How To make Maple Apple Oatmeal Cookies
Cookies: 2 1/2 c All-purpose flour
1 c Quick oats
1/2 ts Salt
1 ts Baking soda
1 ts Ground cinnamon
1/2 ts Ground cloves
2 ts Grated lemon zest
1 c Dark brown sugar
3/4 c Salted butter; softened
1 lg Egg
1/2 c Unsweetened applesauce
1/2 c Maple syrup
1 c Fresh and tart apples
Peeled and finely chopped 1 c Currants
Topping: 1/2 c Toasted quick oats
2 tb Brown sugar
Cookies: Preheat oven to 300 degrees. In a medium bowl, mix flour, oats, salt, soda, cinnamon, cloves and zest. Mix well with whisk and set aside. Cream sugar and butter together in a mixing bowl with a mixer. Add egg, applesauce and maple syrup. Beat at medium speed until smooth. Add flour mixture, fresh apples and currants. Blend on low speed just until combined. Do not overmix. Dough will be soft. Drop by rounded tablespoons onto ungreased baking sheets about 2 inches apart. Topping: Mix oats and brown sugar. Sprinkle cookies with mixture. Bake 25 minutes or until bottoms are golden brown.

Ingredients:
2 sticks butter (1 cup)
1 cup light brown sugar
1/2 cup white sugar
2 teaspoons vanilla extract
2 eggs
2 - 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 - 1/2 cups oats
2 apples coarsely chopped
1 cup apple sauce
Preparation:
1. Combine sugars and butter
2. Add eggs apples, apple sauce and vanilla
3. Mix in the remainder of dry ingredients
4. On baking pan with parchment paper, roll dough into tennis ball size pieces
5. Press down and bake at 330 for 18 minutes

Ingredients
* 2 1/2 cups (231 g) rolled oats (or quick oats)
* 1/2 cup + 2 tbsp (100 g) water
* 2 1/2 tbsp (52 g) maple syrup
* 2 1/2 tablespoons (33 g) extra virgin olive oil
* 2 teaspoons vanilla
* 1/4 teaspoon salt
Instructions
* Preheat the oven to 350°F (180°C).
* Place the rolled oat in a blender or food processor and blend until you get a coarse! flour.
* Mix the oatmeal, vanilla, and salt in a bowl, and add the extra virgin olive oil.
* Bring the water with maple syrup to the boil and pour it into the bowl. Mix with a spoon and let it cool slightly.
* Then use your hands to form a dough. Feel free to add a bit more water if the dough feels too crumbly. Just add it a tablespoon at the time.
* Roll out the dough until very thin (3mm) and cut in circles with a round cookie cutter. If the dough is a bit sticky, I normally roll it out on a baking sheet, to avoid using additional flour.If the dough is too crumbly, don't add too much water. Simply roll out a quarter of the dough at a time.
* Place the circles on a flat tray covered with a baking sheet, no extra grease required.
* Bake until golden brown, for 15-20 minutes. If your oven doesn't cook evenly, make sure to turn the trays half-way through baking. Keep a close eye on the oatcakes in the last 5-8 minutes, to avoid overcooking them.
* When the oatcakes are ready, remove from the oven and allow to cool on a wire rack.
* Keep in the jar.
