1 Lb. lean ground beef 2 Tbsp. flour 1 Tsp. salt 1/2 Tsp. pepper 1/3 C. dry bread crumbs 2/3 C. milk 1 Tbsp. paprika mashed potatoes Mix together ground beef, flour, salt and pepper and bread crumbs. Line ungreased muffin tins with ground beef mixture about 1/4-inch thick. Fill meat nests with 2 table- spoons mashed potatoes. Sprinkle with paprika. Bake at 350 degrees for 25 to 30 minutes.

INGREDIENTS
2 slices of bread
100ml milk
1 onion
2 carrots
750g minced meat
1 egg
Salt
Pepper
Paprika
Vegetable oil
6 eggs
Salt to taste
METHOD
Finely chop the onion, grate the carrot and pour into a bowl. Add the minced meat.
Soak two slices of bread in milk for ten minutes, drain and add to the meat mixture. Add an egg, salt, pepper, paprika and mix well and form several medium-sized balls.
Grease a rectangular baking pan. Place the balls in the tray.
Use a glass to make a hole in the center of the meat basket. Pour an egg into each and bake for 40 minutes at 180°C (356°F).

The first time I tried a cornish hen was when I was 12 years old at sleep away camp. The counselors convinced us that we were going on a “snipe hunt”. They woke us up at midnight, told us to arm ourselves with rocks and sticks, and we essentially ran around the woods hunting “snipe”, which are a small bird (which they told us were migrating through New Hampshire). Turns out there were no snipe, but I was certainly convinced. The next day they gave us, what I realize now, was each a cornish hen for dinner.
That was over 15 years ago and looking back, there must have been something illegal about the whole thing. Either way, cornish hens are delicious, basically tiny chickens that are way more juicy.
