Memphis Ribs Part 2 (Mop Sauce)
As you all know I was a southern belle in a past life and for years I have been searching for the perfect mop sauce, along with perfect rib recipe. After much trial and error, I present to you a southern classic with my own personal twist. Enjoy Y'all.
2 Cups Apple Cider Vinegar
1 1/2 Cup Ketchup
3 Tbs Brown Sugar
1 Tsp Salt
1 Tbs Hot Sauce
1 Tsp Chili Powder
Liberal Pepper
Combine all ingredients, store in refrigerator for top to one week. Serve along side ribs, chicken...whatever floats your boat!
Memphis-Style BBQ | BBQ Sauce Recipe | How to Make a BBQ Sauce | BBQ Sauce Vinegar | Barbecue Sauce
In this recipe, I will show you how to make a BBQ Sauce. This Memphis-style BBQ sauce recipe is easy to make with readily available pantry items you have at home and it tastes out-of-this-world delicious. It has a touch of sweetness from the molasses, a hint of tanginess from the vinegar and a bit of heat from the cayenne pepper. It goes well with pulled pork, ribs, chicken, wings... This homemade barbecue sauce can be used for basting. It can also be enjoyed as a marinade, baste, glaze, condiment, topping or dipping sauce.
Ingredients:
- 2 tbsp or 24g Butter
- 1 Small Onion, roughly 175g
- 2 Cloves of Garlic
- 2 cups or 500ml Tomato Sauce
- 1/2 cup or 125ml Apple Cider Vinegar
- 1/3 cup or 83ml Rice Vinegar
- 1/3 cup or 83ml Molasses
- 3 tbsp Worcestershire Sauce
- 2 tbsp or 35g Dark Brown Sugar
- 2 tsp Yellow Mustard
- 1 tsp Tabasco Sauce
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/4 tsp Cayenne Pepper

Memphis, Tennessee. The home of the Delta Blues, and home to some of the greatest barbeque in the world. Elvis may have preferred peanut butter and banana sandwiches, but a true Memphis dining experience means pork barbeque.
Now one of the unique things about Memphis style barbeque is the way you order it. You either order it wet or you order it dry. What does this mean? If you order it wet you're going to get your barbeque slathered in a nice rich Memphis style barbeque sauce. If you want it dry, it's going to come without the sauce, and simply the dry rub on it. Both are terrific, both have fans that like one or the other, but most good Americans love both.
Memphis style barbeque is pork. You're not going to find a lot of beef. You're not going to find a lot of chicken. You're going to find a lot of pork. The pulled pork sandwich is the mainstay of Memphis barbeque. In such a small area as Memphis, there are literally hundreds of great barbeque joints.
So, if you want to get the real Memphis barbeque experience, we recommend taking a trip down to Memphis in May. Why May? Because Memphis hosts the World Pork Championship, one of the largest barbeque contests in the world, Memphis in May. A couple hundred of the greatest teams in the world come and compete for honors of top whole hog, top pork shoulder, and top ribs.
Give it a shot, come on down. It'll give you a great chance to see what some of the teams around the country are doing. Also it will give you an excuse to sample some great local Memphis barbeque.

Memphis Style Ribs Recipe
How to make Memphis style BBQ ribs. BBQ ribs recipe
In this video I prepare and cook pork spare ribs with a taste of Memphis by using the Rendezvous rub and sauce. Also I use a mop while cooking these ribs, that is the actually recipe that Rendezvous uses on their ribs. My ribs are cooked low and slow, unlike the traditional Rendezvous ribs, and made for some very tender and flavorful ribs. I've included a link right here, for there products that are available on Amazon.com:

Ingredients
Spare rib rack 2 , membrane removed
Rub 1⁄2 Cup (8 tbs) (Rendezvous)
Vegetable oil 1⁄4 Cup (4 tbs)
FOR MOPPING SAUCE
Water 1 Cup (16 tbs)
White vinegar 1 Cup (16 tbs)
Rub 4 Tablespoon (Rendezvous)
Bbq sauce 8 Tablespoon (Rendezvous)
Directions
GETTING READY
1. Preheat the grill dome to 225 F.
2. Brush oil on the spare rib and then spread the rub all over.
MAKING
3. Put maple wood for smoking. Place the ribs on the grill and let them cook for about an hour.
4. Meanwhile mix together water, white vinegar, rendezvous rub and rendezvous sauce in a pot. Heat the mopping sauce on a stove top so that everything is well combined.
5. Mop the sauce on the ribs and continue to cook for another 3 1/2 hours. Make sure to mop the sauce every one hour on the ribs.
6. Remove the ribs from the grill and place them on a tray. Wrap an aluminium foil around the ribs and let them rest for 30 minutes.
SERVING
7. Slice and serve the ribs all by themselves or with a sauce of your choice.
