How To make Mexican Cinnamon Rice
Ingredients

cup
onion, chopped

garlic clove, finely chopped

tablespoon
margarine or butter
1
cup
regular rice, uncooked
1/2
cup
currants
2 1/4

chicken broth
2
teaspoon
cinnamon, ground
1/4
teaspoon
salt
1
cilantro, fresh, snipped (to taste)
Directions:
Cook and stir the onion and garlic in the margarine in a 3 quart saucepan until the onion is tender. Stir in the remaining ingredients except the cilantro. Heat to boiling, stirring once or twice, then reduce the heat and simmer, covered, 16 minutes. (DO NOT lift the cover or stir.) Remove from the heat and fluff the rice lightly with a fork. Recover and let steam for about 10 minutes before adding the cilantro.

Horchata | How to Make Horchata | Agua Fresca | Rice Cinnamon Milk
Have you tried this delicious Mexican drink? This is a classic beverage that is made out of simple ingredients - mainly described as “rice milk.” No, it doesn’t taste like rice and milk. There’s more to it. The sweet taste of cinnamon, almonds + vanilla all combined together - definitely a refreshing cup you probably don’t want to share! It’s served at many Mexican restaurants but it’s often prepared using powder. So making it homemade is such a treat and absolutely easy.
When my husband first made me try horchata, I said never again! I tried it a second time and my life changed. Literally! It’s this good! With all the different variations around the world, I think this recipe comes pretty close to it being “authentic,” or at least in comparison to what I’ve tried in Mexico and in the United States. I’ve tried making it a few times, and now I’m ready to share it. You can also make this dairy and nut free, by replacing the milk and omitting the almonds. Give it a try, and let me know if you like it. ????????
Prep Time: 10 min
Chill: 1 hr (allow mixture to sit)
Yields: 8 cups (more/less depending on straining + blending)
Ingredients
2 cups rice
3 cinnamon sticks
1/2 cup almonds - whole or sliced (I used whole for a more creamier milk/horchata)
1 can evaporated milk
4 cups whole milk
2 teaspoons vanilla
1 cup sugar
2 cups water
???? Garnish with ground cinnamon
Helpful Tips
•Always rinse rice to remove the excess starch.
•Strain the rice mixture well. You’ll need a little patience, especially if you want your horchata creamier and full of flavor. You can definitely use a fine mesh metal strainer - a nut milk bag/cloth works too!
•Serve horchata chilled by refrigerating or pour it over ice and enjoy.

Ingredients:
Basmati rice - ½ cup
Cinnamon - ½ inch stick
Almonds - 15
Evaporated milk - 1 can
Milk - ⅓ cup
Water - 2 cups
Sugar - ⅔ cup
Vanilla extract - ½ tbsp
Method:
Soak rice, cinnamon and almonds overnight or 5 hours. Drain the rice and blend with evaporated milk. Strain the liquid. Add milk, sugar, vanilla and stir until sugar dissolves. Add water and serve over ice. Enjoy!!!

Horchata recipe - a refreshing creamy rice milk drink with Ceylon cinnamon and spices
Horchata is a classic Mexican drink that is a liquid culinary journey south of the boarder. For years we have been fortunate enough to enjoy this refreshing drink anywhere from taco stands, small towns, villages, and now in the comfort of our own homes, we believe this is one of the most universally loved drinks from Mexico. A mixture of white rice, Ceylon cinnamon (commonly referred as Mexican cinnamon) vanilla, sugar and splash of milk (optional but recommended) this drink is best served fully chilled.
Ingredients:
1 cup white rice
2 cups water + 1 cup water
1 Ceylon cinnamon stick
1 cup milk
½ cup white sugar
1 tablespoon vanilla extract
½ teaspoon ground Ceylon cinnamon
Directions for making horchata at home:
1. In a blender add rice, water and cinnamon sticks. Allow them to soak for 3-5 hours.
2. Roughly grind the rice mixture and add the remaining cup of water. Puree the mixture until smooth for another 2 minutes.
3. Pour the rice mixture over sieve into a bowl and discard the lumps.
4. Add the milk, sugar, vanilla extract and ground cinnamon into the rice water. Mix it well and refrigerate for an hour at minimum or more.
5. Before serving, stir well and pour over the glass filled with ice cubes.
